I hate to say it, but it could be the rice, yeah. No way to know for sure, though, until you try the experiment again, isolating the foods completely. Kirkman was recommended to me, too. I know their multivitamins are gluten free, dairy free, egg free. I think nut free as well, and as for corn, they have a corn derived vitamin c in their multivitamin (but not all their vitamins) that is supposed be processed in such a way that there is no corn left. You might want to check out food allergies, as well. I was getting very sick after going gluten free, and then was off and on depressed/angry/stressed. I wonder if going on an elimination diet might be useful for you? Just cut out almost everything down to the most basic foods, and keep track of how you feel when you start adding stuff back in after a few weeks. Actually, my doctor was just discussing the sensitivities and healing after going gluten free yesterday! His answer? Maybe yes, but with a BIG caveat. Agreeing with some of the previous posters - can be days or weeks before you notice an effect, depending on your body. Also, for an adult with celiac, it will be about 2 years before you are completely healed, according to my GI.
