  1. ding! ding! ding! We have a winner!!!!! This bread is everything a good, crusty loaf of bread should be! It's got a great, chewy, slightly crunchy crust (at least fresh out of the oven), a lovely, soft, almost gluteny texture, and is insanely easy. Even DH said he could easily live on this bread, and he's been really hard to please where bread...
  2. I've been buried under school, work, and a bout with the swine flu, so I haven't had much chance to take this cookbook for a trial run. But I have a loaf of their master boule in my fridge, which will get baked tonight. I'm really hopeful this will work out well. I'll also try and get DH to taste the bread tomorrow morning for breakfast so I can report...
  3. In the Canton area, Quaker Steak and Lube has a gluten free menu, but be prepared to be extremely clear about stuff like no croutons, no pita, etc. The manager was very clear when he told me that. Also, the fries have a coating that makes them not gluten-free. And if you want something fried, you have to ask them to use the wing fryer. When I called...
  4. DH is officially back to gluten free (at least on all obvious wheat & major gluten containing foods) as of yesterday. He's starting to talk about wanting more potatoes, has buckwheat & millet grains to try, and is living with his bread. (I'm still toying with the bread, but we're getting there.) At this point, I'm not grumbling or complaining...
  5. I'm thinking I'm seeing some light at the end of the tunnel. DH told me last night he's seriously not liking how his gas has come back with a vengeance, and that he's thinking of going back to gluten-free. I have had a breakthrough in bread (gelatin is not a good substitute for xanthan gum in bread) and if I can get it a bit lighter (which I've got ideas...
  6. Thanks for answering, you pretty much confirmed my hunch. I really appreciate it.
  7. hi all! I am pondering my choice to substitute gelatin in for xanthan gum in my bread recipes. I found somewhere that you could substitute it, but I'm wondering if the gelatin is what is causing all my really gummy breads? I have tried some of the "we promise it works" recipes from sites I got from here, but the only change I made was the gelatin....
  8. Thanks to all, I really appreciate all the support and advice. Rest assured, I have not yet begun to fight. I am back on a bread kick, I am GOING to find a bread that works for DH. As soon as I find one he will live with (and he'd better find something), we're going to have a long talk about everything. I refuse to aid and abet this kind of stubbornness...
  9. Hi all! I thought I'd throw this out there for another source of homemade bread recipes. It's a book called Healthy Bread in Five Minutes a Day. Technically it just got released today, but it has an entire chapter on gluten free breads. I intend on taking that chapter for a spin when I get it in a few days. (I'm hoping to find a bread DH can live with...
  10. I have that cookbook, it's what I've been using to figure out how to tweak recipes that I know he likes. I keep alternating between wanting to be understanding and to whack him over the head with said cookbook for being so stubborn. But in all reality, I am totally expecting him to continue eating gluten. He just doesn't see it, and he doesn't understand...
  11. I like it, he didn't. I tried hiding it in lo mein one night and it didn't get eaten, well his didn't anyway.
  12. I've tried to eat much of what I make for him, but after the first couple of days of both of us eating gluten free in the house, I started having some of my own gas & cramping/bloating issues (I can't eat soy or corn), so I backed off some of the gluten free foods. He sees me cooking most of our meals with him in mind. I've tried to eat most of my...
  13. He won't keep a food journal, but maybe I should! Then again, I'm trying to not force the issue, so I'm not sure how he'd take that. He can get really sensitive about things that I don't think are a big deal. I did try reinforcing how much better I like his gluten-free self without pushing too hard, and I did so very clearly on two separate and not initiated...
  14. He has, the very first day. And so far, he's still resisting. I wouldn't be the least bit surprised if it's the bread & pasta change that he had the hardest time with.
  15. I'm starting off this post by saying that I know my DH is a grown adult who can make his own decisions. That said, my DH decided to do a "trial" of being gluten-free so that he could see if it helped with his gas symptoms, sleep issues, and some other related gastrointestinal issues that seemed similar to celiac though not as severe. He went six weeks...
  16. As for the green bean casserole, my first thought is to ask whether you used green beans that were frozen when you added them to the soup? I usually thaw my green beans first, and try to remove excess water (gentle toweling) before adding them to the soup.
  17. I saw monosodium glutamate on the list of ingredients...that is a gluten. It was on a list of no-no's from one of my gluten free books. That's probably where the problem is.
  18. Here's a standby from my kitchen, I think I make it several times a month. It takes 5 minutes to throw together and is really hearty. Plus, it freezes great! Serve it with your favorite green veggie or salad. Laura Salsa chicken & rice 2 c. brown rice 4 c. chicken broth 1 jar salsa 1 package chicken thighs (skinless definitely, boneless...
  19. Well, it's not a chicken recipe but I thought maybe you might like a new breakfast one. They're kind of modeled after IHOP's (now long gone from the menu) griddle cakes. buckwheat pancakes 1/4 c + 1 tbsp buckwheat flour 1/4 c not quite level cream of rice cereal (dry) 1/2 tsp. baking powder 1/8 tsp. salt 1 tbsp. milled flax seed 1/2 tbsp. oil...
  20. You can try guest relations or the food service office, but you'll pretty much just get the standard list of what's supposed to be gluten free and that's about it. They are not particularly helpful in any guest relation respect to begin with, and food has been a touchy area for several years for people with many kinds of diet issues. The reason I said...
  21. How about tuna seasoned with vinegar & oil and a side of veggies and some gluten-free crackers? You could also make yourself a version of chicken salad and do the same as for tuna salad. How about gluten-free pasta salad with some protein, veggies and a salad dressing that you like?
  22. Having worked there for 2 years and seeing food operations first hand, there are going to be cross contamination issues if you are extremely sensitive.
  23. My DH is much happier on gluten-free foods (he's intolerant) and doing well. I'm not reacting well to them, so we're maintaining a dual household. We have our own food shelves & prep space, as well as his & hers shelves in the fridge & freezer. I know that I've been "craving" wheat based foods because I've been upto my elbows in gluten...
  24. I'm extremely new to the whole gluten free baking thing, as my dh is just went gluten free yesterday. I've made several loaves of bread and a pizza crust, and they're all dense & gummy. They all have had large amounts of rice flour in them, and are from Bette Hagman's gluten-free cookbooks. I followed the recipes exactly as they were called for. ...
  25. My bottle of kikkoman has wheat listed as the 2nd or 3rd ingredient. So I bought my hubby la choy soy sauce.
