She agreed with me that 504 plans are not generally necessary for dietary concers, only if the celiac disease impares a child's ability to learn, then accomodations would need to be made.   3. I don't know if undigested food is just a celiac disease problem. Corn, peas, nuts... these are foods that are hard to break down even in a healthy digestive track.   10. I would imagine those case managers don't work for free. With school budgets being cut all of the time I'd think the money could be better spent. As for the need for an in school contact, why in the world wouldn't a child who can read, and I assume celiac disease alone isn't keeping anyone from being able to read, not be able to be his or her own 'case...
  11. I think that if a school is cooperative, you don't need a 504 if you child only had celiac disease. That's just my opinion since my understanding (via my children's own elementary experience) is that a 504 is for a significant disability. In my mind, celiac disease issues are not significant. Also, I neglected to add that you can mix ground golden flax seed into the pizza crust recipe. It adds good nutrition to the mix, something gluten-free foods seem to be lacking. Add 1/4 cup ground golden flax seed to the recipe I listed above.

  19. One thing that makes a pizza crust good IMO is that it is chewy in texture like good french bread. Pizza crust should also crisp on the bottom while it is baked but keep that chewy interior.
