  1. When we go out, if we get an ignorant, rushed server, we leave. I know that seems awful, but I'm soooo sensitive to any contamination that I don't want to take the chance. I had a salad and asked for no croutons. Of course the salad came with them. The server took that back and too quickly brought another. I got so sick from eating that I determined...
  2. I make stuffing using my gluten-free bread. I cut the bread into cubes and dry it in the oven on 200 degrees. Then follow any stuffing recipe you like. I'm wondering right now if Stove Top's seasoning packet is gluten-free? It should be, it's just seasoning and dried herbs. That would make stuffing sooooo easy.
  3. How true, How true. I was just at a le Peep. I brought in my own bread to have made into french toast since I was really in the mood for that. The waiter made sure that the cooks were extra careful!
  4. I wanted to answer your question regarding acholisim and mental disorders. My grandfather (maternal) was an alcholic. My two older brothers are as well, though they would deny that to their death. There is mental disease all over. Schizophrenia, bi polar, obsessive compulsive disorder, and extreme anxiety. There have been suicide attempts and multiple...
  5. I've had lots of experience with my friends and admittedly with total strangers asking me about celiac disease. The only question I don't like to answer is the "so what happens when you eat wheat?" The other day I gave the answer I'm going to stick with. "My body tries to get rid of the wheat as quickly as possible and in any way possible." This is...
  6. celiac3270, sorry to hear you aren't feeling well. I haven't had a bagle for almost 4 years and really miss them. One of these days I will try one from scratch.
  7. Those emotocons aren't supposed to be there.
  8. Just curious as to how many of you cook from scratch: A) completely mixing own foods from gluten-free flours cooking from mixes C) Buy all things premade If C, where do you buy your products and how expensive are they. The reason I'm asking is I cook all things from scratch because A) I couldn't find a tasty product at the...
  9. Don't most products that have baking powder or baking soda also have gluten just because they are cake or cookies? I'm thinking hard here and I can't think of anything I'd put bp or bs in that wasn't a bakery type product. I have to make all of those myself anyway and use Tones products. Just curious here. What is it that has bp or bs in the ingredient...

Sally, I think the something in the envoronment is the processed wheat that takes out the fiber and ups the gluten. Even whole wheat bread has added gluten. The reason I think this is because my identical twin sons both have celiac disease. the first got it at 3 so we emptied the house of gluten. The second twin then didn't get as much wheat. He...
  11. I heard a lecture that agreed, we are at risk, but only if we do not stick to a gluten-free diet OR if we had celiac disease for a long time undiagnosed.

I am Hungarian and German on my mother's side and German American Indian on my father's side. My mother had all the symptoms of gluten-free but since her antibody test came out negative she will not follow a gluten-free diet. My brother is HD diagnosed, My two sons have celiac disease as do I. I'm pretty sure my maternal grandfather had celiac disease...
  13. Last year our local support group had a presentation pertaining to celiac disease as it relates to other autoimmuin diseases. The general gist was that if a person had celiac disease that went untreated, then the person was more likely to develop other autoimmuin diseases. I don't know your mother's history, but I had undiagnosed celiac disease for 15 years...
  14. I understand your situation completely. Having been gluten-free for almost 4 years now I'd like to offer my take on this. As i see it, you have four choices: 1. Go and be resentful because you can't eat. (been there done that had a rotten time and made my guests feel awkward!) 2. Go and pretend you are having a good time though inside you are resentful...
  15. LOL!!! I do that all of the time. I don't know if it's celiac disease or ADHD. celiac disease has taken the H out of the mix though, I have to say. Seriously though, I do suffer from anxiety. I am on Paxil and that has toned the anxiety down greatly. I was gluten-free for 3 years and didn't have any relief from anxiety symptoms while my other...
  16. I posted a pizza crust recipe in Easy Pizza. It's the last post on that thread. If you want to try one from scratch, this one is not to difficult. As for the rice crust you ordered, can you refuse it and mail it back? lol
  17. Tinkyada six. They are the best. I serve them to company and no one ever guesses that the dish is gluten free. My only complaint is the elbow pasta, it's bigger than mac and cheese pasta. When my son's non celiac friends come over they can tell the difference and get picky.
  18. (Fruit salads, vegetable salads, stir fries, a bazillion ways to make potates or squash, raw with dip, steamed with teriyaki sauce, sauteed with herbs, soups, etc...) Be careful of teriyaki sauce. There is soy sauce in teriyaki sauce and most of those have wheat. You can make your own Teriyaki sauce with gluten-free soy sauce and sugar or pineapple...
  19. Since gluten-free bread doesn't need kneeding and can be mixed by hand with a big spoon, it's actually easier to mix than wheat bread. We could actually consider this an advantage to a gluten-free diet.
  20. I'm self diagnosed too. I've been gluten-free for 3 years, will be 4 in March. I wouldn't go back to a gluten containing diet for anything. I had celiac disease for 14 years without knowing it and thought I was dying (I likely was!) I had improvment right off but this is hindsight observation. Real relief came after a month. Now, almost 4 years later...
  21. I don't have room in my kitchen for two toasters, so I bought a small toaster oven and use these methods to keep contamination out. The toaste came with an extra rack for a broiler. The regular rack is for wheat breads and the broiler rack is for gluten-free bread. I've found that a rack also helps gluten-free bread not breaking during the toasting....
  22. Thanks for the response. My sister has nausia and fatigue after eating hard cheese only. Soft cheeses don't seem to bother her. Her other symptoms are general fatigue, IBS with bloating, cold like nasal symptoms and vertigo. Her blood sugar is also slowly rising and she has pain in her kidneys, especially the right one. She has asked for a biopsy...
  23. I tried a rice crust pizza and it made my boys cry. Monica
  24. Try golden flax seed meal in your bread. You can get it from Bob's Red Mill. OR you can get whole golden flax seed from the health food store and grind it in a coffee grinder. Try this bread recipe Use 3 parts rice flour (a blend of brown and white is good, but I just use white) 1 part potatoe starch 1/2 part tapioca flour Mix this...
  25. can you eat cream cheese? If so, try that as a substitute for the mozerella cheese. Monica
