ARCHIVED Great Egg Bread Recipe
cdford replied to 2new2celiacs's topic in Gluten-Free Recipes & Cooking Tips
Oh yes, the potato bread question. My experience baking before going gluten-free was that the mashed potatoes in potato bread were used for consistency purposes more than anything else. I use to make some mean potato bread dinner rolls. I have not tried it with gluten-free flours, but I suspicion that you could take the recipe I shared and use some mashed... -
ARCHIVED Great Egg Bread Recipe

Here is that recipe... I found the copy I had made of the recipe I was raving about. I have experimented a little and found that a table spoon or two of bean flour adds to the texture without giving it a strong taste. Also, adding just a little extra buttermilk on top of the dough after it is finished kneading in the machine gives the top a smooth look... -
ARCHIVED Symptoms But So Far No News?
cdford replied to whimsygirl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
There are several possibilities here. I know how this scenario works because I had been gluten-free with my young daughter for a while before my own diagnosis. Here is what I found out from my own experience and discussions with my doctors. I don't know how tightly you have been eliminating gluten, so your test may come back showing some level of concern... -
ARCHIVED Looking For Suggestions/comments On Symptoms
cdford replied to margootje's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Have you been checked for Epstein Barr Virus or fibromyalgia? We dealt with very similar symptoms and found that my daughter and I had recurring EBV and for both of us it had translated into fibromyalgia (weakness, fatigue, muscle aches, off and on low grade fevers are symptoms of both). Both can be problems for weakened immune systems such as occur with... -
ARCHIVED Please Help!
cdford replied to inmyhead's topic in Parents, Friends and Loved Ones of Celiacs
The only concern I have with a situation like yours is the reaction of the gastro doc. My experience with them has been that in the early stages of celiac disease, there may not be enough intestinal damage for the gastro doc to see it within his narrow view of the disease. Have your ducks in a row mentally and emotionally before seeing the doctor. On that... -
ARCHIVED Need A Quick, Simple, Meal?
cdford replied to a topic in Gluten-Free Recipes & Cooking Tips
What brand of storebought corn tortillas are you using? I have not found one that was not produced on lines dusted with wheat or on the same lines as the flour tortillas were made. I have tried using a tortilla maker, but cannot get the dough correct to make them come out right. -
ARCHIVED Puff Pastry
cdford replied to barbinwisconsin's topic in Gluten-Free Recipes & Cooking Tips
Try the pizza crust again using some of the bean flours in it. It will hold together much better. We use the version in Bette Hagman's books. I find it works best when I bake the crust a little before putting the toppings onto it. My daughter is middle school age and has actually taken this to school functions where they were ordering pizza for the other... -
ARCHIVED Great Egg Bread Recipe
cdford replied to 2new2celiacs's topic in Gluten-Free Recipes & Cooking Tips
Baking breads has been a long process of adjustment for me as well. The bean flours provide the best texture but are so strong that I cannot stand the smell. I used a recipe from this site last week and have had great success. I even sent a loaf to another celiac in my church this morning. It was based on a rice flour, potato starch, and tapioca combination... -
ARCHIVED Baking In The Oven....
cdford replied to mrsfish-94's topic in Gluten-Free Recipes & Cooking Tips
Don't forget your pans...mine had to be replaced because they had all that good browning from being used for years and years. Oh well, after 22 years of marriage it was probably a good time to get new stuff anyway. -
ARCHIVED Where To Find Gf Graham Cracker Crumbs?
cdford replied to gormlg1's topic in Gluten-Free Recipes & Cooking Tips
I have not tried to purchase ready made "graham" crackers since going gluten-free (I have not had much success finding ready made cookies and crackers that either taste good or don't contain soy). Bette Hagman's cookbooks have some good recipes for crackers and cookies, including "graham" crackers. If you are adventurous, you might want to check out some... -
ARCHIVED When Will Food Taste Good Again?
cdford replied to cdford's topic in Coping with Celiac Disease
Thanks for the info. I am on B complex, B-12, folic acid, and magnesium sulfate in injection form. While I hate having to give myself shots, they really work. I understand from someone in my church that caltrate 600 is gluten-free, but I have not tried them. I will check on the brand you suggested for a multi-vitamin. I think Perrigo labs' vitamins are gluten... -
I did not know that soy was part of the problem with sleeping. I react to it as well. Don't think I have gotten into anything lately, yet here I am at almost 3a.m. reading a message board. It is encouraging, though, to see how many others find themselves up at these rediculous hours. I saw back a few posts that someone was having trouble with cal-mag tablets...

ARCHIVED When Will Food Taste Good Again?
cdford replied to cdford's topic in Coping with Celiac Disease
I had not thought about the vitamin issue with the odd cravings. That may be why the orange juice jug keeps getting empty as well. I'll start back onto my injections of b vitamins and magnesium. Man, those mag sulfate shots are no fun. It is not that I find the gluten-free foods untasty. I have been an excellent cook for much of my life and have transitioned... -
ARCHIVED Feel Like I'm Sinking....
cdford replied to anglepoise's topic in Coping with Celiac Disease
The fibro stuff hasn't gone away completely...probably won't since I have been so sick for so long. It has, however, mediated significantly. I actually have days when a few extra strength "tylenol" and a couple of pain pills keep it bearable. That would never have happened a year ago. Then it was eight pain pills, eight soma, and a bunch of other stuff just... -
ARCHIVED When Will Food Taste Good Again?
cdford replied to cdford's topic in Coping with Celiac Disease
I have always eaten pretty healthy, so craving chocolate milk and fried potatoes is a new one for me. Those two things are the only things that look good or smell right. At least I am not gaining back any weight! -
When will food smell and taste good again? I accidentally got into some gluten in August and still have no desire to eat. I can handle homemade hot chocolate or chocolate milk, but nothing else seems good. My system is back working again, but I just don't want any food. What happened to those good old days when I craved broccoli or greens???

Since I had been almost fanatical about whole grains and homemade breads, it was a tough transition. My body felt jerked around without the gluten. It reacted almost as though I had been addicted to the gluten like a drug. I had a hard time figuring out what to eat and what to avoid. Once I did, however, I began to feel better gradually. Now I'm glad...

cdford replied to anglepoise's topic in Coping with Celiac Disease
Been there... You sound much as I did when I first got sick. The fibromyalgia is painful, the days long and exhausting, the thought of life that way overwhelming. There is good news for you. Your body is beginning to heal. I know that sounds strange, but it is true. I was totally disabled with the FMS, chronic fatigue, neuropathy, and so on by the... -
ARCHIVED Milk Contains Gluten!
cdford replied to CMWeaver's topic in Gluten-Free Recipes & Cooking Tips
Don't remember where I read it, but I did read somewhere that wheat is an additive in milks sold in certain parts of the country. If I remember which site I read it on, I'll message back. I know that in the southern state of Georgia our milk is just that...milk. -
ARCHIVED Milk Contains Gluten!
cdford replied to CMWeaver's topic in Gluten-Free Recipes & Cooking Tips
By the way, to the one who asked due to a soy intolerance, we just use half butter and half light olive oil. It provides the mouth feel and tastes good without the strong taste of the EV olive oil. -
ARCHIVED Milk Contains Gluten!
cdford replied to CMWeaver's topic in Gluten-Free Recipes & Cooking Tips
Okay guys, I have to come into this one hard and heavy. I can figure why someone who has a problem with dairy might go to some of these margarines, but why on earth would an otherwise healthy (a treated celiac falls into this category) choose to put that stuff into your body? You are almost always better off to have small amounts of "real food" unless... -
ARCHIVED Coffee/spice Grinders
cdford replied to loregon's topic in Gluten-Free Recipes & Cooking Tips
I have used my B&D to grind flax seed a handful of times with no problem but I do not have any long term info yet. Since it was a gift, I sure hope is holds up. There won't be any buying a new one for me. -
ARCHIVED Does Anyone Bake Their Own Gf Bread
cdford replied to mwical's topic in Gluten-Free Recipes & Cooking Tips
Thank goodness for the cut and paste feature in Word! I have had a problem finding bread that did not have a strong beany flavor, so I definitely got that one. I am now making my own "recipe book" out of your recipes and a large MS Word document. I have to assume that no one minds a "copyright infringement" if you posted it here! If anyone else tries this... -
Thanks! We needed that info...been looking for an alternative to the expensive frozen ones.

After an accidental gluten incident, I had gastritis so badly it took a dose of IV demerol to control the pain after eating mashed potatoes. The GI doc had me drop back to a clear liquid diet and pain medication for a couple of days. They then had me gradually move up the ladder to soft diet then onto regular foods. If I ran into a problem, I was to drop...
