  1. If you do much baking, you are probably better off in the long run to buy whole grains (such as rices) and mill them yourself rather than paying the exhorbitant prices at the grocery store.   2. We use Pace salsa and add grated cheese and a tablespoon or so of milk. It comes out well enough that I can't keep the ingredients in stock around here. Be sure to cover the bowl in the microwave or you can get a mess really quickly. We usually nuke it for a minute, stir, then cook for another minute.

    Inside my nose, inside my ears, in my hair...you get the picture. The ones in my nose and ears can drive me crazy. For some reason, they seem to get more irritated than those on my arms and chest.

  5. The longer I am gluten-free, the better it seems to be. Someone mentioned soy as a problem. My endocrinologist says that some of the recent research is pointing to the soy as a contributor to the neurological problems in celiac. I have to stay away from it for that reason. Just let me get tired (and we all know how often that is...) or get into some gluten...
  6. Yes, some of us react even to laundry detergent. In our family, we are DH as well so that may be the reason. At any rate, not just any detergent can be used here.

  14. Pizza crusts work better if you blind bake them (bake them without toppings for a few minutes). My 14 yr old has even taken hers to school functions to share and her friends enjoyed it. I use the recipe in Bette Hagman's gluten-free cookbooks. I adjust to use a mix of rice and the bean flours because I don't like the strong taste of just the bean flours.
  15. My dh is so sensitive, that I cannot even breath or touch any gluten. I woke up a few days ago broken out and knew that I had not had anything. Turns out my 10 year old had eaten BBQ potato chips in my bed while watching tv and I did not know it until I reacted. He must have spilled some crumbs or wiped his hand on my pillow.   16. Yes! It took me a while to figure out that it was gluten and not just "my age" if you know what I mean. Usually the other symptoms clue me in when it is gluten. It also smells something fierce when I have been glutened.

I have yet to find a brand that is not either manufactured on the same lines as the wheat ones or where the lines are not dusted with wheat flour.   22. The Toastmaster is a horizontal loaf machine. It is great if you have multiples eating in your family. I use the smaller one if it will be just me. If you get a machine with a horizontal loaf that is larger than 1 1/2 lb size, be sure to get one with more than one paddle so that the dough mixes well.
