  12. You can make sourdough bread that is gluten free by using gluten free flours and a gluten free starter. Bette Hagman has some recipes in her book but I haven't tried them yet.   15. I do soak grains like rice, quinoa, sorghum and buckwheat overnight before cooking them to make them easier to digest. I haven't tried it with flour but I have heard of the practice. Let me know if you try it. I would be interested.

  18. I often substitute sorghum flour for brown rice flour in recipes. It's a straight 1:1 exchange and it should work just as well in reverse.
  19. I'm 36 and no, I haven't heard of it. But it might possibly be sold under another name here. I've never suffered from anxiety though. Besides the GI issues, my neuro symptoms are brain fog, dizziness, exhaustion, finger numbness and occasional vision issues (ie seeing weird flashes and patterns of light).
