I'm cooking for a group of 11. 4 are gluten-free and one of the gluten-free is also on a no salt and high iron diet. I am just not creative enough to come up with anything. I'm thinking about quinoa and then something with shrimp? Any help is appreciated! -

My two youngest kids (dtr and son) are gluten intolerant, we do not know if it's Celiac but plan to have genetic testing soon. They are both being tested for Hemophilia and Von Wilebrand, this came about because my oldest dtr just tested positive as a symptomatic Hemophilia A carrier. My 3yo is Gluten Intolerant. She was diagnosed based on symptoms-anemia, malnutrition, vomiting, irritability, slow growth, etc. This was before 12 months and her main source of nutrition was breastmilk! If you're trying a gluten-free diet, you would remove gluten for a month and then add it back in. You'd notice the symptoms when you add it back. That being said......I wouldn't do it without letting your ped. know so he can monitor things. Good Luck! -

My LO hated dairy free cheese, she prefers tacos without cheese anyway. Also the dairy free mozz we tried didn't melt so it was gross on pizza. We recently tried the glutino bread crumbs and really like them, for meatloaf we use rolled (gluten-free) oats and LOVE it! -

My DD doesn't like boxed gluten-free mac and cheese, I make Alton Brown's stovetop mac & cheese with tinkyada elbows. only takes a little longer than boxed and it is so so good, we all love it! I love Wheat-Free, Gluten-Free Cookbook for Kids and Busy Adults. When DD was diagnosed this cook book was a lifesaver! Most of the recipes are fairly simple and there are kid friendly things in the back-I believe crafty recipes but I haven't looked at it in a while. -

I do breastfeed my kids and I do/did eat gluten and it hasn't been an issue. DD2's problems were only with foods she consumed. We're fortunate and my consumption of gluten hasn't been an issue. (disclaimer-I don't eat much gluten, I crave sugar when pregnant/nursing). I think I will wait, but how long?! I always said once DD2 was 2 1/2 I'd try to reintroduce... -

I've decided to delay testing, I spoke to someone at the lab who advised the same. She said the tests just aren't good enough (I'm talking blood tests here) to diagnose children. My ped. has her diagnosed with GI based on results of changing her diet, iron tests and iron & zinc supplements. DD2 is only 2, hopefully our rural school gets it by the time... -

I've been experimenting with black bean brownies/cakes. Pretty tasty but all of mine include eggs because we raise chickens I would imagine any egg substute would work though. I'm just wondering how everything turned out? I also wonder, if a BFing mom has celiac and is eating gluten...her BM would maybe not be as healthy? Maybe lower amounts of fat or other nutrients since your own body isn't absorbing nutrients. -

DD is 2 now and just doesn't seem as healthy as she should. We went to a chiropractor for addvice, she suggested vitamins (which she sells), a referral for some sort of biofeedback or biorhythm and adjustments (not comfortable with that). I agree with the vitamins, especially Bs. What vitamins do you use? Also what brand? I give her Swansons Childrens...
