    it doesn't say on the website that it is gluten-free or Cf,etc. That is wierd to list gluten like that. :huh:

    That was the one! The label on the bottle said Gluten free, dairy free, etc. etc...

  2. Celiac daughter bought CVS multivitamins today... buy one-get one free! The label said Gluten free, dairy free and lots of other "free" stuff... gluten being the only important one to daughter. On an impulse, she went to their website to find a completely different ingredients, including GLUTEN... not maybe gluten in something... but GLUTEN as an ingredient!

    She called their "Customer Care" line and the woman on the phone was completely noncommittal... "Gee, they're not SUPPOSSED to have gluten... I wonder why gluten's listed in the ingredients??"

    Daughter told her she'd be taking the vitamins back and that they'd better get their labeling and website straight because it was a matter of becoming VERY sick!!

  3. I've never used any sort of flour in my cornbread recipe... from my girlfriend's old granny in Alabama:

    Preheat oven to 400º. Put a few tablespoons oil in a small cast iron skillet and put it in the oven to preheat w/ the oven.

    Mix:

    1 cup cornmeal

    1 cup milk or buttermilk

    1 egg

    1 tablespoon baking powder

    about 1/4 to 1/2 cup sugar

    When oven and skillet are preheated, pour the batter into the skillet. Bake for about 20 min. until the top is browned. Let it sit for a few minutes in the skillet before turning over onto a plate.

    YUM!!

  4. When I started reading your story, I thought to myself, "I'll bet she's around 12." How well I remember that age w/ my oldest. She was once hysterical and yelling at me and I said, "What's the MATTER w/ you??" And she fell into my arms sobbing, "I DON'T KNOWWWWWWWWWW." It's a FUN age.

    All that said... I've often thought that being diagnosed at a very early age would have been easier for me. I had 30+ years of cooking and baking (I loved to bake) under my belt when diagnosed. I've yet to taste/bake a chocolate chip cookie that remotely compares to the onces I made for years. I don't bake much anymore, 'cept for the weekly bread loaf. gluten-free bread isn't bad, but it sure ain't the challah bread or crusty country loaves I used to bake! If I'd always been gluten-free, I'd have had nothing to compare.

  5. I'll admit I've said it many times. People have expressed their sympathy, etc. and I've said, "Ya know what? With all the health issues people can have... this is NOTHING. I've just had to learn how to cook differently, that's all."

    Cause I've not found it so difficult. We didn't eat a lot of processed food even before my celiac diagnosis and I've always enjoyed cooking. We don't eat out a lot and, honestly, I've found dealing w/ celiac disease WAY easier than being dairy free!!

  6. This is my nightmare... that I'll be in the hospital and not "with it" enough to make sure I'm being served food that's completely gluten free.

    Or worse... old and living in a nursing home and served a gluten-laced meal and the staff getting MAD at me for having continued uncontrollable diarrhea!!

    I can only hope that gluten free eating will become more commonplace... but then we're STILL at the mercy of the kitchen staff.

    AARRGGHHHHHHHH!!!!!

    Maybe wearing a Medic-Alert bracelet is a good idea??

    I am new to the forum, and just wanted to introduce myself. My name is Adam, and I am a college student with celiac disease. Not much else to say right now - talk to you all later!

    Welcome Adam! Good forums and incredibly knowledgable people here for when you have questions. I know there have been several threads about dealing w/ celiac disease in college!

  8. Is rice save for celiacs? What about the rice milk? I can't eat any milk or milk products (casein)also. Rice milk is my replacement for the real thing. I'm more terrified from not being able to eat milk products than from not being able to eat gluten. I grew up on milk. I always drank it. I miss my slice of bread with butter. Ach... :(

    Rice is naturally gluten free and lots of people drink rice milk when dairy becomes a problem. That said... my daughter can tolerate white rice while brown rice makes her ill! There's also almond milk out there.

    I'm totally with you on the difficulty in giving up dairy as opposed to gluten. Being gluten free is way easier, I think... because we can make/buy yummy breads, etc... but there is NO substitute for a glass of delicious milk or good cheese and butter.

  10. I was completely surprised to find Udi's bread (frozen) in a new natural market that opened here (in the boonies of Arkansas). It is the best thing since sliced bread!!

    I got the white bread and was unhappy to find that a "bubble" had baked in it so half the loaf had a big hole in each slice. The "whole grain" one was even better!!

  11. I'm new to this and I'm just diagnosed with gluten intolerance. I still have labs to do for Celiac. My doctor told me that I had to go gluten free but I'm having a hard time with dairy. He never said to stay away from dairy but I keep reading about having to do them together initially. My question is in the beginning is giving up dairy really important? I also had sushi last night and forgot that imitation crab meat had gluten as well as soy. I can control what I do at home but eating out can be difficult. Today I had corn tortillas at a restaurant and re-fried beans then later I find out some re-fried beans have gluten. I had gelato and thought gelato was gluten free but apparently that can have gluten in it. Then there's maltadextrin? Maltitol any malt is barley derived right? I feel overwhelmed even my Tums has wheat of some form in it. I just need someone to tell me the truth about dairy and going gluten free. Also then there are tons of gluten free alternatives with corn is which, GMO and fattening isn't it?

    I didn't eliminate diary when I went gluten free... going on 10 years ago... and all was well. Fast forward to now... and it seems that dairy no longer loves me. And, I'm finding it MUCH harder to eliminate dairy than it was to do away w/ gluten! There are good breads and many ways to cook/bake w/o gluten... but butter is butter and good cheese is good cheese and there ARE NO SUBSTITUTES!! (Well meaning friends keep suggesting alternatives, but there ARE NONE for butter and good cheese)

    I also limit grains (corn included)... mainly because I'm a total carb addict (Hello, my name is Leslie and I'm a carboholic!).

    Gluten can be in just about ANYTHING... so reading ingredients or asking gelato sellers is key.

  12. We had to abandon our fave Mexican restaurant a few years ago when they changed their distributor and their corn tortillas were now dusted w/ wheat flour!

    We don't go out for Mexican so often anymore. I've found it difficult to feel comfortable w/ the answers to my questions when there's a language communication problem.

  13. I posted a while back about eating at Chilis. The manager brought me the gluten-free menu and took my order personally. When I called him back to our table after finding flour tortilla strips in my salad, he was so apologetic. I wrote to the company and actually complimented the manager on how he handled the situation.

    Went again a few nights ago (we live in very rural Arkansas w/ few options for dining out and Chilis is the only one w/ a gluten-free/wheat allergy menu). I asked for the gluten-free menu and ordered a salad from our (very) young waitress. I explained why I was ordering off the gluten-free menu and asked her to please take care w/ my order. After ONE bite, I found not just a few slivers of flour tortilla, but the entire salad FILLED with them. The weird part is that the description of the salad I ordered wasn't even supposed to contain tortilla strips in the first place, so it wasn't supposed to be an issue!!

    I asked for a completely dry house salad instead. I was so angry and disappointed, but decided that it's really MY responsiblity. IF and when we go back, I'll ask for the manager and explain to him/her that the last TWO times we've been there, I've had to send back my meal. We like going there occasionally, so if I can't get the manager to understand how serious it is... we won't be able to go back.

    I'm really hoping they'll be friendly and LISTEN and act accordingly. If not, I'll certainly be in touch w/ the Chilis corporation and back on here to tell people that their gluten-free menu is useless. B)

  14. Now, in my case, this came LONG before the celiac diagnosis - but like many, I've spent my life developing some serious Potty-Fu skills. I'm the gal to ask where the bathroom is - even if I've never been in the building before. Desperation will point the way. (Weirdly, the longer I'm gluten free and feeling healthy, this skill is atrophying!)

    I also, by 17 (30 now) had completely burned out any sense of embarrassment or shame in diving for random lumps of greenery if all failed. (If asked which is preferred - Wide leaves in an open field or hay in a private bush? I always say go for the big leaves, you don't HAVE to ever see that farmer again if you don't want to)

    However.

    One day about 8 years ago, I was driving home from a long day of work and classes and had THAT moment. That... "Oh... crap!" knowledge that will tell a practiced soul they have 5 minutes to make some VERY serious and precise choices in their life.... or have the choices taken away anyway. And ruin your upholstery.

    Busy town street. But no stores. Alllllll private homes. Not one with a soul...wait, wait! In the front yard of one was a tiny white haired old lady (if you read British mysteries, think Miss Marple) tending her lovely rose garden.

    Into her life fell a squealing of tires and brakes, as my not too small backside dropped my car into her yard (no doubt tarnishing her golden years a tad. I'm 6'2 and built like a 2nd tier Valkyrie) and I pelted up to her in desperation.

    All I could manage was a choked out "Ma'am, I SWEAR I'm not a serial killer. Here is my wallet, my mom's phone number is in the front, it's your call. Your roses... or your bathroom, and we don't have TIME to argue about it!"

    She weakly pointed up the front steps, murmured something along the lines of "Top of stairs, left door???" before I bolted past her (Positive I would have a few moments of relief before being hauled away by the police.) 20 minutes of being sicker than I can tell (let me put it this way. Jeans - salvagable. Underware? Double wrapped and pitched. I ended up leaving in my emergency skirt I kept in my bag.) all the while waiting for the sound of sirens. I think I practiced my "Hello, officers. Of course I'll come quietly, but you might wish to put some newspaper down on the seat first" speech a few dozen times. I momentarily considered praying for : death/lightening/the Rapture/dimensional travel... but no. If the prayers in the car hadn't held this off, I wasn't going to be in much luck for any of those.

    I cleaned the bathroom. Scrubbed it really. And when I couldn't put it off any longer (and realized the window was sealed so I couldn't just scarper) I went out to face the music...

    It was a lovely mug of tea, really. And the cake was nice too. She told me my mother was worried and would see me at home.

    8 years later and I can't pass a rose garden without blushing flame red... and giggling just a bit.

    That's one of the funniest and sweetest (at the end anyhow) stories I've ever heard!

  15. Homemade risotto SHOULD be gluten free, but you never know how a restaurant may choose to change the recipe.

    I ordered rice pudding in a restaurant once (assuming it was gluten-free... we can NEVER assume) and as I was putting the spoon to my mouth, our server, who also had celiac disease, just about knocked the spoon out of my hand. The rice in the pudding was really orzo pasta!!

  16. I'd bring my own food every time you get together... w/o fail. The risk of CC and loving good intentions are just too great. Just practice saying, "I'm so glad we can all be together and I don't have to bother anyone or worry about getting sick because I bring my own food." Say it over and over again to them.

    Maybe they will embrace your challenge (and even find out it's their challenge too), but it seems like a lot of people here who post about family who doesn't or won't understand end up sick and unhappy. Don't give that scenerio a chance... just keep repeating, "I'm so glad........"
