  2. Hi, I got Quinoa flour instead of Quinoa flakes for a Betty Hagman recipe for mock oatmeal cookies. Does it really matter in texture and taste before I open up the bag? Or the big question how can Quinoa flour be used...such as a substitute for another flour? Are there good recipes out there using the flour? Ken
  3. Dear Friends with Celiacs, I am making bread and the only flour I could find in the house was All Purpose Baking Flour from Arrowhead Mills which has baking powder in it. I'm making it in a machine so will the two together cause it to rise too much. Should I leave out the yeast? Ken Ritter 1:16 Today

  5. Hi All I went to a Friendly's last night and was told they would not accomodate me. I wasn't pushy or anything. Does anyone ever feel like we are treated like dirt by some of these people? What can we do about it? It was the end of a very bad day and I walked out after speaking to the manager. Ken

  9. Try to make pancakes with Barbras baking mix and add a little buckwheat with it and you will change your mind. But you do have to combine it with other flowers. Ken

  13. Hi, I get these headaches almost every day. Even when I'm relatively gluten-free. I never made the corelation but I'm wondering if this is a part of the condition. If we are losing nutrients this might be a symptom of that. If you have them what do you take for them. Ken
  14. Hi all, I made some bread the other dight but didn't have any eggs so I used egg replacer. I put 7 1/2 teaspoons of egg replacer and three tablesppons of water to equal three eggs. The bread didn't rise. How much would = three eggs? Too much math for me. ken
  15. "How long have you been gluten-free?" I've been gluten-free for about two years. I've just never seen anything like it. "The longer you are gluten-free, the more your body heals, and the more you start absorbing calories." Is there anyway to help the body not do this or slow the process?
  16. Hi, Okay this is bad. I went to put on a pair of pants (38 w) that are usually to big and now I can barely get in them. I began to think about my diet and realized that I was eating alot of rice. Can that be the culprit? How do you know if it's a not thyroid problem. I've never had weight issues before.   18. Hi all, If anyone has experienced this I'd like feedback. I was told by my Dr. that I am having some reflux so he put me on a pretty hefty antacid regiment. Today I had diarria. Could this be a reaction from the antacid? Are liquid antacids gluten free? Ken
  19. Hi, Even us guys have it bad. I have been making some really great dinners lately and some nice desserts. I got on the scales this morning and it hit 200. I usually stay at about 180. I couldn't believe it. What flours are the highest in fat anyone know? How is the South Beach diet and can it be adgusted to the gluten free diet?
