Great ideas guys. Thanks alot. Hope my story made you smile. Ken -
I was cooking so well. I had planned this meal for weeks. I had the cheese all mixed up as the lazagne was in the pot boling. When I went to lay the strips down they fell apart. I ended up with iddy biddy pieces of pasta in a big pot with all the ingedients thrown in like it was a mud pie. I stood there yelling at the the whole mess saying "I'm having lazagne...

Kenster61 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
Here's a good question. I just looked at the ingedients for egg nog (PET) and it said it had natural and artificial flavoring. Does anyone know of egg nog is Gluten Free. There doesn't seem to be a web site for this product. Merry Christmas Ken Ritter -
ARCHIVED Glutened At Christmas Party
Kenster61 replied to Kenster61's topic in Coping with Celiac Disease
Thanks for the feedback. My problem is I've been doing things with this family ever since I came down with the illness and I've explained my situation. I'm trying to be understanding but they still give me the ol "oh but theres just a little wheat in there" line. I'm getting to the point that I don't want to eat anywhere. I've been glutened at least five... -
Hi Gang, I know someone else is going to go through this sometime during the Holiday season so I'm going to ask how people handle this problem. I went to a celebration yesterday with friends who know I have Celiacs. They told me what foods were safe to eat. Then, as I was eating the "Safe" item, she told the recipe. It hasd Soy Sauce in it. I don't...

Hi Guys, I only have 5 more minutes on this computer so I have to make this quick. I haven't had a Pecan pie since being diagnosed almost three years ago. I got a recipe from Betty Hagmans book Comfort Foods. I was in 7th heaven. If you get a chance to make this over the Christmas Holidays you owe it to yourself to do so. If you want the recipe just...

I'm wondering if there is a connection between celiacs and A.D.D.. I have had A.D.D. ever since I can remember. I was only diagnosed with ciliacs back in 2004. Maybe some of you have the same symptoms. Ken Ritter

ARCHIVED Needed: Good Bread Recipe For Machine
Kenster61 replied to VydorScope's topic in Gluten-Free Recipes & Cooking Tips
If you're looking for premade types of mixes I've tried Bobs Red Mill, Gluten Free Pantry, and Authentc foods mixes which are all fine. Betty Hagmans recipes are very good as well. Here is a recipe that I've been using in my machine and I like it best. Cup #1: brown rice flour Cup #2: 2/3 cup gluten-free flour blend* plus 1/3 cup flaxmeal Cup #3: equal... -

Kenster61 replied to LauraZ's topic in Coping with Celiac Disease
I also get brain fuz. Many of you have said you get stomach rumblings. I have a very loud gut. It's embarassing when you're out in public because it sounds like Mount st Helens is getting ready to... well you know. Does anyone share in this lovely experience. Ken Ritter -
ARCHIVED Coping With The Cost Of This Diet...
Kenster61 replied to Jnkmnky's topic in Coping with Celiac Disease
I am so glad to see people who have been experiencing the same things. I go to a dietary shop in my town and I can walk out with only about 6 or 7 items and pay 40.00. The other problem is I got food stamps earlier this year and they don't take this into consideration. I couldn't even use the card they gave me at some of the specialty stores. That makes it... -
I go to a United Methodist Church in Philadelphia and when it is communion time I bring a slice of my own bread and my pastor serves me that. He is very respectful when he takes it cupping his hand with great reverence. It means alot to me. I didn't take communion for the first year after being diagnosed because I was afraid of offending someone if I ask...

PF Changs Rocks!!!!!!! I just went to one in Marlton NJ. It was like heaven. The waiter was so proffesional. He started to mix the soy sauce and I asked if it was Gluten free. He came back and said no but went and changed it and showed me the new spoon he was using so there wouldn't be any cross contamination. I also got the Shrimp with Lobster sauce...

ARCHIVED Top Three Worst Gf Products
Kenster61 replied to anerissara's topic in Gluten-Free Foods, Products, Shopping & Medications
My worst experience yet has been dry dusty cookies from some company that is sold by whole food. The story about the cookies crumbling in your hands was about right. Most of my horror stories are with cooking. I wanted Graham Crackers and milk sooo bad one time that I got a recipe and went about making it. The batter was too thick and so was my brain... -
I need to rant. I'm sure we all have days like this but if you could give me some thoughts on this I'd like some feed back. I work at a city Zoo. I love my job but tonight I was invited to a dinner for patrons. I went to the desert table and saw they had these little cups of pudding that looked tasty. I checked the ingredients and it said in big bold letters...

Hi, I'm an actor and many of the jobs I go on have meals served to us. How should you handle this if it might mean you don't get a certain job because they can't accommodate you? Also have you ever had a group invite you out for YOUR birthday and then serve a birthday cake you couldn't eat. This has happened two years in a row at a "friends" house...
