  1. I know how you feel Amy. I have to go off my diet once a week and eat a big spaghetti dinner, of course made with rice pasta made at a gluten free factory, and grating my own cheese. When I get down to my winter camp in Mexico, I am going to try and add some meat to the dinner. Maybe some grilled chicken or Yucatan thick hide brahman beef .
  2. I read what they recomend and other than, rice and wild, no salt added canned salmon, I eat the diet. I do really good with the wild Alaskan canned salmon and see no problem with it. I don't do so good with some chicken meat, and I could not even imagin eating pork, or other meats loaded with hormones, chemicals, etc.
  3. Hi Liz, Sounds like you are doing good. Last year in the Yucatan I did really good with the free dives and the scuba diving. I did a 60 foot free dive with no problem. This year I feel even better and who knows, maybe a 75 foot? I don't push myself but I've always been like a fish in the water. I did have problems with the high elevation hiking at Great...
  4. Tinkyada rice pasta is produced in a dedicated factory, and I bought it at Albertsons here in College Station, Texas.
  5. Hi Libby, I'm about to head south soon. With daylight savings time about to change, and all the birds flying south I think it is time to go. I do have a little trailer that I will take down with me. It has a 2 burner stove, sink, counter, and convertable sofa. Not much but better than cooking off the tailgait of my truck. The shopping down there is...
  6. The word celiac comes from the Latin word coeliacus meaning gut or abominal cavity. Living in Thailand, India and Mexico I have found that it is way to hard to try and explain the disease, so I end up doing most all my own cooking. In Thailand I did really good with eating out, but in India I got sick quite often. I would have done much better in India...
  7. More than likely the chicken I ate was treated with wheat based chicken broth to keep it moist. I did notice that it really did stay moist when I cooked it. It could also be from all the chemicals they feed to the chicken.
  8. Talking about the tired feeling, I had the same thing after eating some fresh chicken I bought at the H.E.B. here in Texas. Because the package said %100 chicken I thought I was safe. I did notice later that the chicken was actually frozen when it was put on the shelf. What I wonder about is can wheat fed chicken be unsafe? I switched back to saltless...
  9. Hi Gretchen, I don
  10. Stress management is an important tool to keep the body free of disease. With the likelihood of terrorist attacks in our future, stress management is an important topic for people dealing daily with health issues. After growing up in Los Angeles during the cold war, I realized that I suffered from terror attacks during thunder storms and from hearing sonic...
  11. Hi Heather Ann, I disagree with you 100%. It is just a case of creating the proper environment to create 0ppm food. As long as people believe that a little poison is alright, we will still be poisoned. I agree with you that some of us create our lives. Most people seem to be happy to let others create their lives for them.
  12. In our society deceit is considered acceptable for the greater good of greed, and until greed is thought of as bad, you will have to deal with deceit and gluten in your processed foods. Every time someone uses deceit to gain anything, this belief gets stronger.
  13. At 43 years old I had full blown celiac disease. It took me 6 months just to figure out how to eat. At 45 I feel completely normal (except a little joint pain).
  14. Peppermint dissolves gallstones. My gall bladder pains went away after drinking peppermint tea for a year. I don
  15. Hi YankeeDB, About cooking in the room; some are understand and some do not. The ones who do not make me cook outside (and they just tolerate that). I do not like to be deceitful, but I have to agree with celiac3270. What the hotel owners don
  16. I kept have asthma every time I went to do work on my little travel trailer. I kept doing elimination projects to find the problem, and finally traced the asthma attacks to the new tires. Apparently I have a latex allergy. I sealed all the little cracks around the wheel wells to start. Has anyone else dealt with this problem? I was wondering if the...
  17. A few years ago I kept having cravings for mint tea. During that time I had terrible pains in the upper right side of my abdomen. After drinking mint tea for two years the pain went away. It turns out that mint tea dissolves gallstones. I keep having cravings for apples. On reading up on asthma, I found out that apples are one of the best foods for helping...
  18. A good working dish washer should be okay for washing dishes and utensils, from what I have heard. The grill is a definite no. Stay away from porous materials for cookware. Stainless steel is one of your best choices. Do NOT use Teflon coated cookware. Keeping things separate is good. Wash your hands after touching anything contaminated with gluten, or...
  19. Hey, if you can see it you can get rid of it! In processed food you can't see it because it's all ground up, and it all looks the same.
  20. The FDA allows rat dung and bugs into processed foods, simply because there is no way of keeping it out. I gave up processed foods because there is absolutely no way to guarantee it does not contain gluten. As I was cooking breakfast this morning I realized that not only does my food NOT contain gluten, but is also does NOT contain any rat dung or bugs...
  21. Hi Phil, I did notice when I first went gluten-free that I was running to the bathroom to urinate all the time. By asking questions on this board I found out it was certain fruits that caused the problem. Processed fruits will exaggerate the problem. Try eliminating all fruit from your diet, and then slowly add it back in one at a time. The culprit will...
  22. I have noticed that since I eliminated processed foods from my diet, my muscles have become firmer and better defined. I
  23. I wonder if the high stress activities in my youth contributed to the level of the disease I have now. I thrived on surfing big waves, and even remember surfing while houses were being torn apart by the extreme surf. I also remember having good days and bad days. I gave up surfing around the age of 22, because I thought it was the surfing that was giving...
