  1. I am non-celiac gluten intolerant. While trying to refine my gluten free diet, I also gave up dairy just in case that was giving me trouble. Now, I occasionally try to re-introduce dairy by trying small amounts of yogurt for a few days. The first day or so usually go ok although I get a little rumbly and gassy, but by the 4th or 5th day I get hit with...

    ARCHIVED Eggs?

Eggs and I stopped getting along about 2 years into my gluten free diet. Not sure why this happens. They always made my stomach feel a little challenged, but now I have to avoid them. I can get away with eating baked foods with egg as long as I don't get carried away. They used to be my favorite breakfast item.
  3. Thanks Roda, for your input. I think I may be in the same boat as you, kind of a 'tweener. Like you, I look towards the super sensitives when trying to figure things out. I quess we have all heard of the expression, "canary in a coal mine". If something is tolerated by super sensititives, chances are it'll work for people who aren't quite super sensitive...
  4. Any other super sensitives doing ok with Lays Stax as GFreeMO mentioned? I would be in heaven if I could find a potato chip that works! As a side note, I made my own potato chips using canola oil. Had gut pain the next day. Might need to try other oils. I've noticed some debate about oils from time to time on this site. The oils may be the source of...
  5. Do you consider yourself as super sensitive? Just wanted to confirm that. Sometimes people with normal sensitivity pop onto super sensitive topics. Can get a little confusing. I have just started on this category and I do not know who's who sometimes.
  6. I know that a lot of super sensitives have trouble with Bob's Red Mill Products. Has anyone had success with Ener-G rice flour, potato starch, etc? I am trying to dodge buying a heavy duty grinder to make my own. BRM seems to give me trouble. Ener-G's web site is impressive re precautions and dedicated facility. Any super sensitives using it?
  7. Did your husband do well when he first went gluten free? I did very well for close to 2 years, but have really struggled for quite some time now. If our patterns are similar, maybe we could help each other figure this thing out.

    ARCHIVED What Rums Are Ok?

Well, these posts sure show that there are different levels of sensitivity. For me, it has been 2 different phases (or maybe more). I've lived in both worlds so I certainly understand the variety of responses. Some are so sensitive that no level of testing or testimonials from manufacturers can assure a product will be ok. They just know when they react...

    ARCHIVED What Rums Are Ok?

Peter, are you a super sensitive celiac? When I was 1st diagnosed as gluten intolerant, I drank bourbon and all kinds of liquer and did fine. I also ate plenty of processed gluten free food. The fun did not last, though. I now have to avoid all processed foods and am gradually trying to figure out what vices I can go back to. Some of your posts seem...
  10. I do ok with the clear Bacardi Rum. However, I am missing some of the more rich flavors of the dark rums like Pusser's and Captain Morgan's Spiced Rum. Anyone know if contamination from barrels or additives for color are a problem with those? Any other suggestions would be welcome. Another one I like is Cock's Spur (I think that's the name. I know it...
  11. Thanks to everyone for all of the advice. I was considering making a small area gluten free, but I think the other way around would work better. We'll try a dedicated gluten cabinet and counter and have the rest of the kitchen gluten free. I have been known to send family members outside to pour and mix flours. I'll continue that practice. Thanks again...
  12. I don't want to beat this gluten free kitchen thing to death, but I was wondering about other people's experiences. My gut has not been terrible lately, but I am still feeling a little off. I have done a lot of the elimnation stuff and am currently avoiding all processed food. I was curious about whether or not any of you have struggled with nagging problems...
  13. Any luck with other brands?
  14. Thanks. I wish I had a Wegman's near me. I live near Richmond, VA. There are Wegman's north of here. So you do ok with corn? I have been staying away from it, but I am not sure I really need to. I have trouble with oats too.
  15. Thanks for sharing your experience Steph. You have been a lot of help to me on a few occasions. I definitely do better if I stay away from processed foods altogether. I have been keeping a food diary. I'm one of those thin guys who craves carbs, so processed foods are always calling me. I had a good couple of good days and a really fantastic day yesterday...
  16. Thanks for the advice, Shauna. We have opened up the conversation in my family about a gluten free house.. We are going to try some dedicated space first and see how that goes. The genes I was tested for were HLA DQ2 and DQ8. The IgG test is not specifically diagnostic of celiac disease although 20% of people with celiac test positive for those antibodies...
  17. I've been struggling for quite some time now with what seems to be an increased sensitivity to gluten. When I was first diagnosed about 5 years ago as non-celiac gluten sensitive, I responded incredibly well to a less than perfect gluten-free diet. That lasted about 1 1/2 years and then I started having problems again. My symptoms are and always have been...
  18. Some people think pots and pans make a difference and some don't. I got my own new pans after experiencing the same thing you did. I also started eliminating processed gluten-free foods. Got some better, but still struggle some. I definitely think a cured glutened cast iron skillet could be a problem. This "honeymoon" period followed by a return of symptoms...
  19. I know what you mean. It is a lot easier to be optomistic when you are not feeling badly. The true test comes when you feel sick. I tend to get pessimistic and have irrational thoughts like "this might last forever". I am working on overcoming that tendency. I often wonder though, if depression is really a true symptom or just a natural side effect...
  20. Hope you will be feeling better soon. On the positive side, the more gluten reactions you have, the better you get to know your symptoms. You can find courage and faith in knowing what to expect and knowing that though you have to go through it, it will end eventually. Doesn't hurt to chat with the man upstairs. Been there, done that! Once you get through...
  21. Sounds like my pattern. I do ok for a while and then start missing all the foods I have to do without. I feel the best when I avoid all processed gluten free foods. I am having to rededicate myself today. I had been avoiding corn but couldn't pass up some kettle corn marked gluten free. I kinda went crazy after what I thought would just be a few bites...
  22. Thanks for the heads up! I had read about the dangers of the bitter variety, but it appears you have to do some soaking, etc. even with the sweeter variety. It does have an unusual odor. Maybe this explains why some people need to stay away from it. I started with some frozen cassava chunks from the grocery store. The directions said to boil it for ...
  23. What's the recipe? or maybe a link to a recipe.
  24. I sometimes wonder about the rice milk. I have switched from Rice Dream to Good Karma. What do you use with your cereal?
  25. I have read on other parts of this forum that a lot of candy bars are gluten free. How well do you super sensitives tolerate main stream candy bars?. My favorites are Snickers, Baby Ruth and Pay Day. I normally try to avoid processed foods, but I do need to gain some weight. Easy snacking is not always easy. Besides, I really miss the candy bars.
