We started the gluten free diet (plus cutting out other offending foods) almost 7 months ago and my youngest is really growing alot:) I was going over her records the other day and the way she is growing is amazing... At birth she was 8 lbs 8 oz, 20 1/2 in long 2 weeks...8 lbs 1 oz, 20 1/2 in long 1 month...8 lbs 7 oz, 20 1/2 in long 2 months......
  3. For my youngest...she was 15 months old when we couldn't stand her being sick anymore and figured out the problem. She was born a normal length and weight (8 lb. 8 oz., 20 1/2 in long), but she had a blood glucose level of 31 was she was first born.   6. The most surprising for me was my daughter's gag reflex going away. She is finally able to eat yogurt and mashed potatoes without throwing up:)
  7. I order my flour from nutsonline.com. I buy the almond flour from them and love it in Elana's Pantry recipes. I also bought the coconut flour but have not tried it yet, they have on their site what they test to and precautions that they take.
  8. That sounds really good. And I don't think you need to work on dessert...baked apples are one of my favorites. I made them for breakfast the other morning and stuffed them with homemade pumpkin butter.
  9. Tonight I am making a simple veggie stir fry over white rice. It's a rainy day so I didn't feel like doing much.

  11. That recipe looks yummy! Anyway I used the Tinkyada brown rice lasagna noodles except that I didn't cook them before I made the lasagna, it didn't get gummy that way. Just make sure that the sauce that you use covers the noodles so that they are able to cook.
  12. Yesterday was a banana for breakfast, lasagna for lunch and a small salad for dinner.
  13. Tonight I'm making carrot fries...baby carrots cut into fourths and coated with olive oil, brown sugar, cinnamon, salt and pepper. Baked at 425 for 15-20 min.
  14. My favorite cookie recipe with almond flour, I use the one from nutsonline.com, is snickerdoodle cookies...it is based off of Elana's Pantry cookies.   15. I actually need to try beans, I never liked them growing up but since tastes change so much over the years I will be trying them again. The mac n cheese recipe sounds really good, I'm going to have to try that.

I have never had Indian food, but I am more then willing to try it. I'm trying with the food today...for breakfast I had apple slices dipped in homemade pumpkin butter and 24 roasted almonds...

We started my youngest on a gluten free diet when she was 15 months old and she didn't fully stop with the bad poop (it had gotten worse also) until we took out dairy and soy, plus a few others but dairy and soy were the worse. Good luck...I really hope that you can get everything resolved for your son.
  20. My oldest can have dairy a couple of times a week (really bad eczema otherwise) so we will be having it sometimes.

Personally I am unsure of how to get all my protein since as a family we can't have alot of dairy, no soy, so far no eggs and I have never had beans in a way I liked them although...
  22. On another thread I said that I miss good bread and dipping oil the most, can't find a sub either bc of not being able to really have yeast or eggs. Baked potatoes have definitely taken the place with a good extra virgin oil on it and some salt and pepper.

  25. Thank you anyway. No yeast or eggs is making bread tough to find right now. Maybe eventually I will figure something out, we have been doing some experimenting with almond flour lately so hopefully I find something suitable.
