  1. Awesome! I am trying to remain so grateful that I live in an area of the world with easy access to gluten-free foods. It could be so much worse!

I say 'I have celiac' (diagnosed by blood test) to help distinguish it from all the other intolerances/allergies in our family, which can be outgrown and I don't have to be hyper-diligent about avoiding. I've had to figure out food allergies in my kids by trial and error and I think some people assume I'm just making up their symptoms.
  3. Thanks for the replies. I am wondering if it's best to get a biopsy (which would have to be ASAP) or just self-diagnose. I am switching the whole house to gluten-free because of me which will make further testing later on in life next to impossible, right? I'm waiting for a call from our doctor.
  4. I was diagnosed with celiac just two weeks ago. I had very few symptoms. I had my 2.5yo son tested since he has all the symptoms (diarrhea, low BMI, irritability, chronic loose stools (sometimes grey ones). His test results came back today and they are very much negative. So now what? Is he too young to get an accurate test? What confuses me more...
  5. According to my Better Homes & Gardens cookbook, you can use soft (untoasted) breadcrumbs in place of regular at a different proportion. 1/3 cup regular bread crumbs = 1 cup soft bread crumbs To make soft, just put bread in food processor. My meatloaves and meatballs turn out great!
  6. 1) So Delicious is pretty good (Coconut based). Their ice creams are to die for! Especially the cookie dough, which is gluten-free I believe. 2) No clue - we just use pasta and "butter." Best Life Buttery Spread is super cheap and gluten-free/CF too. 3) Depending on what you're making, you could just use plain coconut yogurt. 4) Shortening should work...
  7. Breakfast fried rice: Scramble one egg in pan with some oil Add cooked rice, canned black beans (with a bit of the bean juice), salt, and pepper to the pan. Heat and enjoy! I also knew someone that did this with rice, egg, bananas, and maple syrup. It didn't work out for me too well though.
  8. Perfect! I'll look into them. Can anybody recommend a good brand. I don't need too many bells and whistles, just something that works. Plus, I don't have lots of time to research them because I'm a little overwhelmed with all I have to replace in my diet, kitchen, etc.
  9. Thank you so much for responding. You're right, I really should just go gluten-free for a bit and see how it goes before making any decisions. I keep dragging my feet though! Were your kids' health issues food or allergy related?
  10. I just found out I have celiac and need to overhaul the kitchen. It's time for a new toaster. I currently have a traditional toaster but have heard good things about toaster ovens. Is there anything I can even make in one that's gluten-free though? If all I will be doing is toasting bread, I'll save the counter space and go with a regular toaster.
