I think that I think about food the same amount as I did before...just thinking about a different KIND of food. (Cuz I love food! )

It's hardest when I go to the grocery store, and walk by aisles on aisles on aisles of stuff I can't eat, to get to the tiny little shelf of gluten-free items. I feel a bit like I'm suddenly in a foreign land and I don't match everyone else any more.

ARCHIVED Purposely Glutened
BeFree replied to glutenfreemamax2's topic in Coping with Celiac Disease
No desire to cheat...it's more like the other way around, I'm a little paranoid of accidentally eating anything with gluten. The pain I had from my last big reaction was horrendous. This is nature's way of making SURE that we don't continue to eat what's bad for our bodies! It's like those people who are alcoholics and they take that pill that makes... -
ARCHIVED Four Months In And Feeling Alone
BeFree replied to mollydee88's topic in Coping with Celiac Disease
"On here you will learn that your anxiety disorder was most likely caused by gluten" I feel like my anxiety has lessened since going off gluten. What was funny was, for a few days I started to feel very anxious, and when I woke up in the morning I was feeling like I was going to have a panic attack. I found out I had accidentally bought nuts with trace... -
ARCHIVED No More Wine For Me.
BeFree replied to pricklypear1971's topic in Coping with Celiac Disease
Wow...thanks for the warning, I had no idea this could be an issue. Been off alcohol for awhile because of just generally trying to "purify" my system, but if/when I drink another glass of wine I'll be very careful & take it slooooow. -
ARCHIVED Dealing With The Holidays--Help Please!
BeFree replied to BeFree's topic in Coping with Celiac Disease
Yeah...I probably don't want to walk in the door and say, "We can't do anything until I clean the kitchen!" LOL -
ARCHIVED Question About Lactose Intolerance
BeFree replied to BeFree's topic in Food Intolerance & Leaky Gut
"She said if adding some cheese or butter to things made them taste better to encourage me to eat, go ahead and do so." The nut-thins do taste a lot better with some cheese! -
ARCHIVED Question About Lactose Intolerance
BeFree replied to BeFree's topic in Food Intolerance & Leaky Gut
"You may FEEL like your intestines are being torn apart" Yes...That is EXACTLY how I felt the last time I ate a cheese sandwich on wheat bread, like I was being torn apart, it was so painful. Nice that there are people that understand. Eating just cheese by itself (ie, without the gluten), seems to be manageable for me though, fortunately. Uncomfortable... -

"I would clean the kitchen once you arrive" OK I think that just answered my question right there, my family's kitchen is large and kind of messy... Picturing cleaning it before I eat anything, I might starve LOL! I think I'll just invest a set of "travel dishes". And a giant roll of tinfoil. -
Mizzo...thanks so much for that recipe. I will definitely try it!

ARCHIVED Question About Lactose Intolerance
BeFree replied to BeFree's topic in Food Intolerance & Leaky Gut
Thanks so much for your answers. I'm OK with some occasional discomfort as long as I know I'm not damaging my body. I ate some gluten-free pizza and had some upset afterwards (first time I'd eaten cheese since going gluten-free), and realized I'm probably lactose intolerant. The next day I ate the same pizza with a lactaid and it went much better... -
ARCHIVED Do You Guys Get Your Gluten Symptoms For Other Intolerances, Or Different Symptoms?
BeFree replied to AzizaRivers's topic in Food Intolerance & Leaky Gut
"If they told me living on nothing but cardboard will heal what's wrong with me, I'd be happy to eat cardboard for the rest of my life." LOL that's how I feel...I just want to get better! -
I have searched the internet and cannot find the answer to this question. I realize this question has probably been asked many times but if someone could answer I'd really appreciate it. I understand that a person with celiac can have a temporary lactose intolerance until the villi heal completely. If you ingest lactose before the villi have completely...

ARCHIVED Dealing With The Holidays--Help Please!
BeFree replied to BeFree's topic in Coping with Celiac Disease
I'll be driving. I guess I will just need to bring my own dishes, stop at a grocery store when I get there, and set up my own space in the kitchen to cook my own food and wash my own dishes. It will be weird, but oh well! Gotta get used to the changes I guess! -
ARCHIVED Dealing With The Holidays--Help Please!
BeFree replied to BeFree's topic in Coping with Celiac Disease
I'll be staying with family for several days, rather than just attending one dinner. I know they will offer to cook for me. Should I just ask them to wash their dishes thoroughly before they cook anything (or rather, wash the dishes myself to be a bigger help!), or should I bring a few of my own pots and pans? I am new to the diet, but so far it seems... -
ARCHIVED Dealing With The Holidays--Help Please!

I have redone my kitchen to avoid cross contamination. Whenever I came across a dish or spoon that I cooked with that gave me a reaction, I just threw it out. I'm now left with a clean, safe kitchen. This will be my first holiday season gluten-free. While my family will be understanding about me having to stay away from certain foods, they obviously... -
ARCHIVED Do I Need A Diagnosis?
BeFree replied to BeFree's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Oh and also, the last time I "challenged" myself with gluten, I was in the worst pain of my life. Much worse than anything I'd had when eating it daily. I'm afraid of gluten now, it seems like poison. I do want the diagnosis and I think it would be very important to have it in my medical records, but the thought of regluttening, yikes. -
I had the Udi's this morning, toasted it a nice golden brown in my oven since I don't have a new toaster yet. Wow--it was good! So much better than I thought it would be! I got to enjoy my toast this morning with a nice big glass of orange juice. Yay!

ARCHIVED Found Discounted Bob's Red Mill....
BeFree replied to kendon0015's topic in Gluten-Free Foods, Products, Shopping & Medications
Found the Bob's Red Mill baking mixes today at the Big Lots in Kansas City. The gluten-free cornbread mix was *cheaper* than the regular stuff, AND in a bigger package--score!!! -
Mizzo...my favorite bread was Orowheat Country Potato Bread. Very light and crunchy toasted, slightly sweet, kind of half way between wheat and white in terms of texture. I got some Udi's at the health food store today, I'll give that a try tomorrow morning.

Before I became gluten-free, my very favorite thing to eat for breakfast was plain buttered toast. Nothing else on it, no jelly, peanut butter or nothing, just toast, and I ate it every single day for breakfast. I miss it so much--Chex cereal for breakfast is just not the same! Is there any gluten-free bread that tastes close enough to normal to eat as...

ARCHIVED Do I Need A Diagnosis?
BeFree replied to BeFree's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
"I must add, as a word of caution.....that if you have had an extended time with intestinal distress, mineral deficiency or issue with absorption, you should seek some medical testing. It's a good measure for your medical history and to rule out other issues of greater concerns." I understand you're not a doctor LOL, but specifically what do you think... -
ARCHIVED gluten-free Hyvee Pizza Is Wonderful!
BeFree posted a topic in Gluten-Free Recipes & Cooking Tips
I have been on the gluten-free diet for about 2 months and so far have stuck to the bare basics, just natural fruit, veggies, and meat. I have been afraid to try the store bought gluten-free foods for fear that they would taste terrible and I would be disappointed. I tried the HyVee gluten-free Pizza tonight for the first time and it was so good!!!!! I... -

ARCHIVED Do I Need A Diagnosis?
BeFree posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm new--Hello everyone! I have been on this diet for two months now, and I feel AMAZING, like a new person, all of my symptoms are gone. I'm sleeping like a rock, full of energy, happy, no more acid reflux, no more signs of vitamin deficiencies, no more stomach gurgling, no more painful gas and bloating. With all this, is it really necessary to get...
