  1. This is what I'm so afraid of--people not understanding. I'll be starting a new job soon and I'll have to tell all of my new co-workers that I can't eat gluten or dairy, can't really join them going out for lunch, can't join them in eating the birthday cake they bring to the office, etc. I don't want to start out my new job looking stand-offish, or like...
  2. Before going gluten-free I never knew what to expect at night. I made excuses to stay up at night because I didn't want to go to bed. I was plagued with restless sleep, nightmares, insomnia, night-time anxiety attacks, sleep walking and talking, night-time leg cramps, and I never slept through the night.   7. Tonight's menu: Pork chops with apples and honey glaze, baked potato with broccoli (Yep, more potatoes!) "She didn't realize that an oven previously used to bake gluten pies etc. was a big no no for us" What? My oven will CC me???? I sure hope not, it's baking my pork chops right now. Do you mean she used a TOASTER oven, with a crumby tray...

  10. Oh thank you so much for your input everyone. I'll stick with the bagels then if I buy Glutino. The quality of the bread is important to me, plain old bread is what I like/miss the most. I can live without the cakes/cookies/desserts & sweet things, what I love is toast, sandwiches etc, so the bread really has to taste good. I really love the Udi's...

  13. OK, it sounds like I could give it a try. I saw that there was a gluten-free section in the cookbook that came with my breadmaker, and I got excited & wanted to try the recipes.

  15. My symptoms come on very quickly. I can tell almost immediately if I've eaten something with gluten in it and/or cross-contaminated. I start getting a gurgly stomach right away. The length of time it lasts and the intensity of it or amount of pain, depends on how much of it I ate. I think the more you get used to feeling "normal", the more you notice...

  18. OK. My recipe book says, "Wash out your breadmaker between baking gluten-free and gluten-full bread." I thought that sounded a little dangerous. Has anyone out there that lives in a gluten-free and non gluten-free household, actually tried this?
  19. I know I have to get a new toaster, but is there any way to clean my breadmaker? I'm gonna be making a lot of my own bread, and those things are expensive. I'd like to be able to use it again.
  20. Hmmmm. Thanks for the info. It's really interesting learning how different foods affect people in different ways. The book that I'm reading talks about the history of celiac and how scientists went about discovering that gluten was the source of the problem. It's interesting.

  25. I know that I'm not supposed to overload on the processed gluten-free foods, but which of them are the healthiest? Last night I had some brown rice & flax-seed pasta for dinner, I thought that was pretty healthy, but does the pasta also count as one of the "processed" foods to eat sparingly? I want to be healthy, but I also want to eat the widest range...
