  1. I was making a desert for a party last weekend and I thought I'd try this one Open Original Shared Link, but since it wasn't gluten-free I subbed the flour for gluten-free all-purpose flour and added some xanthan gum. Well after baking it for two hours I couldn't remedy the soup in the middle of the cake, so I ended up buying a gluten-free yellow cake mix...

    ARCHIVED Pf Chang's

Yeah, PF Chang's is one of my favorites. Unfortunately they don't have lunch prices for any of their gluten-free options but you can be rest assured they took great care of your food when it comes out on one of those red plates. Just don't eat the fortune cookie, cause they always bring me one...maybe just so I can read the fortune.
  3. In addition to the green stuff you may want to makes some clam chowder, turkey, or beef too. Clams are high in iron. Beans also have more iron than your leafy greens. Open Original Shared Link
  4. I'm also from TN. Maybe it's something in the water lol. I haven't been officially diagnosed with celiac, so I consider myself NCGI. Welcome to the forum, I just joined myself not too long ago.
  5. You may want to consider getting the gene test done. There's been recent debate as to why the endoscopy shouldn't be the gold standard for celiac diagnosis. Currently they are trying to convince physicians that any 4 out of the 5 indicators should be enough for diagnosis: celiac symptoms, positive blood test, positive endoscopy, gene test, and disappearance...
  6. I'm glad you can salvage your mormor's (my gluten-free's family is norwegian) rolling pin. Sometimes you can't wait on science to catch up on what you body is telling you, especially since your daughters are celiac. Good luck!
  7. Try looking for coconut ice cream. It doesn't necessarily have a coconut flavor, depending on what they want it to taste like. I liked the stuff even before I had to eat gluten-free.
  8. I totally agree about the brownies. Way better than gluten brownies. I very slightly under-bake mine and they stay nice and soft for days. I hated the cookies though, so i gave them to my roommates who actually liked them for some reason.
  9. I actually like some of the gluten-free breads better than their gluten counterparts. Try glutino or Udi's bread. Keep them in the freezer and toast them to thaw them out. I'll go ahead and tell you now that you may just want to microwave it or toast it in a skillet since your toaster likely is going to cross contaminate any gluten-free stuff you put into...
  10. Is Gluten-Free Goodies still open? I tried to find them last time I was home (I'm in school in Memphis) and never found them. You can also do PF Changs (very informed on CC issues and incorporates the gluten-free menu with the regular one) or Pei Wei which is owned by the same company. Brixx is another good pizza option. And Tomato Head in downtown Knox...
  11. Yeah, my father also had a few kidney stones when he was younger. And my cousin on my dad's side also has a gluten intolerance. Thanks to those that have voted so far!
  12. I'm starting this poll because my curiosity was sparked by another thread. Like many of you I have gluten intolerance. Unfortunately I don't know if this is related to Celiac's disease because because I refuse to endure the gluten challenge to be tested further. Along my journey to adulthood I've experienced appendicitis and multiple kidney stones (beginning...
  13. This may be a stretch but clonazepam (brand name Klonpin) has been shown to treat vertigo (off-label) at low doses. So you could try to get your doctor to prescribe it for anxiety if that is covered.
