  9. I just don't feel it's anybody's business what you do or don't eat or even why. Unless it's a trusted friend, family member or doctor or health professional it's really nobody's business. If someone acts aggressively about the food you eat then why even be around them period, because they are going to have the same abusive attitude about lots of other things...

  13. Yes you have to be really careful because a lot of Asian food (noodles, sauces) does have wheat, but you can use the rice noodles and "glass" noodles. I'm hoping there will be some in the store that are labelled gluten free because you still have to be careful where things are processed.   18. I'm trying to avoid potatoes and every pre made flour I've checked has potato starch. (I also can't eat buckwheat) Do you think it is possible to bake bread or pancakes, etc, without potato starch? I would just make my own flour but why is potato starch in everything? What does it do for the flour mixes?
  19. I've heard a few times now that it is important to consume enough fat when on a gluten free diet. Obviously fat is important no matter what but why is it especially important when eating gluten-free? Does it help the small intestine or something else related?

  22. I realize that it is sometimes suggested to quit dairy at the same time as gluten. I've read that dairy is the primary cross reactor with gluten. (Sorry if I am not using the correct terms). Also that we process the (lactose?) in dairy in the part of the small intestine with the tips of the (villa?) that have been damaged by gluten. So some of my questions...
