  1. I am a little late stumbling upon this post but that is AWESOME!! I am so excited, I wish I could go eat there right now. I can't wait to have a real pizza- thanks so much for sharing the tip!
  2. That is great! I too just hit the year mark. It's a mixed blessing huh? I agree with you totally that the label reading is so much easier now- that is the thing that overwhelmed me the most, at first it seemed like there was nothing, absolutely nothing that I could eat. Now it is second nature to always check ingredients and I have found plenty of great...
  3. I am going to be traveling for two weeks on buisness, the first part of the trip takes me to Minneapolis this weekend for a convention. I have been really stressing about what I am going to eat the entire time. I was so excited to see the post about the Bittersweet Bakery! I will definitely be stopping in and stocking up on my way to the hotel. Thanks...
  4. I've been dealing with this too and it is driving me all kinds of crazy. I finally have decided that I think some of the relatives do know they have it, they just don't want to find out "officially" because they aren't willing to change their diets. Italian dishes, bread, pies are all things that are a staple at family get togethers. I think my future...
  5. Last week I had to go to five different company lunches in a row and even though I was very careful with what I ordered, by friday I was feeling like death- nausea, stomach pain, D, sweaty, massive headahce, etc., etc. I assumed it was hidden gluten and I would feel better soon but it is now monday afternoon and I still feel the same. My question is...
  6. I was fairly proactive in finding a diagnosis. But I guess I just don't understand how you can't be. After years with no answers from doctors finding an answer to my health problems was the single greatest purpose in my life. And so I don't get how they could have an answer, and yet they choose to sit around and complain about how crappy they feel. Why...
  7. I have been gluten free for nearly a year now and it has changed my life. The problem I am having now is that I definitely see signs of Celiac disease in my family and I can not seem to convince anyone that they might have it. For starters, a deceased uncle was diagnosed with "wheat intolerance" as a child. He never followed the diet and was miserable...
  8. When I was debating about being tested or not, my biggest fear was that if I didn't do it no one would believe me or take it seriously that I needed to follow the diet. But happily this wasn't the case at all, they were all just thrilled I finally found a way to feel good again. Everyone has been really supportive, even without an "official" diagnosis....
  9. My doctor also wanted me to eat gluten again for 2 months so he could test me. At the time, I debated doing it but now I am so glad I didn't. I had already wasted enough years of my life feeling miserable, I had no desire to spend another minute sick. If you feel better on a gluten free diet then it seems to me you already know all you need to know, despite...
  10. Happy Birthday to you too!! If you have a store nearby that you can grab this at, you should try to find a Gluten Free Pantry Brownie Mix. They are SOOO good and easy to make- with a few candles and some frosting they just might be a suitable cake replacement! The ice cream tasted great, by the way. It was gone way before the cake. I suspect most...
  11. Thank you all for the support! It really is more about the idea that no one thought of it than the actual cake. And wouldn't you know, that about 5 minutes after I posted that message, a coworker came back from lunch informing me that he had picked up some Blue Bunny chocolate chip for me!! I couldn't believe it! It makes feel horrible about complaining...
  12. I'm a little bummed today. It is a tradition in our office to celebrate the birthdays each month with a cake. Which is usually a little hard for me because I happen to sit right by the spot where everyone congregates to eat the cake and socialize, and I feel really left out. Today is especially hard because I am one of the July birthdays so a few weeks...
  13. Bard's Tale Beer has just shown up at our Local Hy-Vee. In fact, they have an entire display of it set up in the organic food section. I have tried it, and it tastes great with gluten free pizza!
  14. Wow, I can not wait to make these! I use to make cinnamon rolls nearly every Saturday and I have really missed that tradition. Thanks for sharing.
  15. I recently ordered a bunch of meals from Comfy Cuisine. They make pizzas plus pasta meals, so far everything I have tried is good. Instead of flour, they seem to use a lot of egg. Though the pizza doesn't taste like traditional pizza, it does hit the spot and I don't even mind the leftovers for lunch the next day.
  16. This sounds easy!! I can't wait to try it, thank you.
  17. Does anyone have a good recipe for gluten-free noodles or pasta? I have really begun to miss kneading a nice big ball of dough, and hauling out the pasta machine to make noodles. I especially would love to find a recipe for specialty pasta flavors- like spinach or sun-dried tomato. Or maybe someone has a recipe for old fashioned egg noodles- just like...
  18. Whenever I am going anywhere that I am not sure if the food will be safe or not, I take some Bumble Bars. They are extremely filling and easy to pack. I especially like the chocolate crisp variety, but they are all good, though I don't care for the lemon as much. My husband jokes they look like bird suet! You can order them by the case online, I also...
  19. My gastroenterologist also encouraged me to eat gluten again for a month to be tested. But I finally decided it seemed like it was more for his benefit than mine. The fact that my mystery illness that plagued me for years immdiately went away when I eliminated gluten was enough evidence for me. I don't need to be a statistic for him to know what I need...

    ARCHIVED Kansas Doctor Needed

I am interested to see if you can find a good doctor!! I live in Kansas City, and over the course of 6 years I have seen four GI's and numerous general practice docs trying to find some answers as to why I had such horrible digestive troubles- not a single one of them ever suggested Celiac. I learned about it on the internet and decided to give the gluten...
  21. Well, I can definitely see the advantages of not testing easier than the advantages of going for it. I agree with everyone that is seems silly to go through being miserable again and still have no answers. I am actually quite sick of all of these tests, especially when the results are always normal. It just makes you wonder when the doc is so insistent...
  22. I am one of the many who stumbled upon a gluten free lifestyle on my own, before being tested. And now, my gastroenterologist would like for me to have a biopsy this summer, and eat gluten for a full month beforehand. I can not decide whether to do this or not, and could use some advice!! I have been reading these boards for awhile, and hope someone might...
