Gail, have you noticed any problems personally with this bread?
I didn't seem to have any reaction ........so for me after 2 1/2 years might not have reacted as fast as before-- but so far so good.

I didn't notice a reaction eigher. For many months I would make pizza with their pizza crusts ( every sunday ) for the football games. So I ate this more then I did the bread. I'm not as sensitive with GI as you are though. My symptoms are mainly brain fog and real bad bloating in my stomach with c.c. Then of course depending on how bad the c.c. it quickly turns into a couple days on the couch with pain all over. I'm hoping we hear from others on this too.

I can't carry anything down stairs if I don't have at least one hand on the railing. I always thought I was weird because I couldn't even go on escalaters without holding on the railings but now I know my balance was always screwed up.

I remember you Brian, you thought your grill was cc'ing your food in some way. I'm praying you can get the help of an expirenced doctor who knows alittle more then an allergist. Don't give up. Hopefully it will be only for a short time.

Run away!!!!! Open Original Shared Link. That bread has been shown to have serious CC problems. I wouldn't touch it with a 10 foot villi.
My goodness I can't believe its that high. I have been eating this bread off and on for awhile. They sell it at as the gluten free bread at my local health food store. They go through about 40 loaves a week. They told me their raw dog food and Sami's bread products are their biggest sellers.
I always wondered about the fact it was not a dedicated factory. That number is so high though. Even oats as contaminated as they are run about 200 to 1800ppm. Makes me angry I'll pay so much for special oats and then eat this bread! Well thanks for the heads up.

Hi Everyone,
. Once in a while I would get constipation and gas but nothing that the average person didn't get.................... HOWEVER, Since going gluten-free i am having stomach problems? Don't know why in the world this is happening, most of my other symptoms have improved but this stomach issue has sucked big time.....
What are your symptoms with the stomach? Some possiblilities with just guessing is your not getting the fiber you used to get so stomach acid doesn't get carried out and causing irritation. Or the opposite could be true your not making enough acid and food stays in your stomach to long causing gerd. This is what people spend millions of dollars on every year to find out.
Eigher way probiotics will work. It will help the intestines implimenting good bacteria which will help with gas. It might take awhile finding one that will work for you. I really don't have any favorites but others I'm sure will post theirs.

Is cheese sensations the same as cheese whiz or velveeta? I like that this recipe uses both natural cheese and abit of the creamy cheese that comes in jars. I wouldn't want to use all velveeta type cheese but some helps with the consistancy. Which is why I used to use the white sauce.

I guess what I always worry about when using different flours is do they perform with the same thickening power as the wheat flour does. I know how to use corn starch but its the others I'm not familar with. I should spend a day in the kitchen and see how different flours thicken a cup of water.

You might look into a possible reaction to MSG. It would be in the broth and it's in all turkey deli/lunch meats. Although it's a hidden ingredient in many things. They either go by a different name or in turkey deli meat and canned tuna it'll be in the ingredient "broth". There are so many names for it it's hard for me to list them here. If you google "other names for MSG" or"hidden names" you'll get a list.
If you have a leaky gut MSG can give a person many symptoms. Some of them can be alittle scary. The blood brain barrier can also be considered leaky and give me all kinds of neurological problems.
If you don't think you react to the MSG in products like this it just might be the high sodium content they have. Your body can react to high sodium by retaining water. Which is why people get high blood pressure from it.
I guess you could keep testing different soy ingredients to see if you react the same. For try testing soy alone like in the milk and see if it gives you the same reaction.

I've made homemade mac and cheese several times, using Tinkyada pasta and a sauce made with white rice flour. It bakes well and tastes great!

I want to make homemade mac and cheese with tinkyada shells. They've been in my cupboard for half a year.
The recipes I'm most familar with is making a white sauce and adding shredded cheddar cheese, adding it to cooked noodles, then baking it.
For those who have expiremented with this before have you used cornstarch, or another type of flour you've found to be bettter. And if you use cornstarch do you need the melted butter because you usually make a slurry with it, not like flour where you need to cook it with the butter.
AND I'm wondering is it better not to bake it. I'm thinking the shells will get mushy and expand to much in the oven.

I also want to thank everyone for the replies. I often feel really nauseous for a few hours after waking. Think me sitting at my desk with a flat sprite and some apple sauce staring at my computer and wanting to throw up. Sounds like the blood sugar might be my problem. Is there any way to know for sure whether my blood sugar is low other than experimenting with eating/not eating before bed?
You can buy a blood glucose monitor. You'll have to get the strips that you put into the monitor for each test. Also a lancing device with ultra thin needles. Its not as bad as it sounds and if you really think you have issues its worth the piece of mind to find out. Expecially if diabeties runs in your family. But even if it doesn't bloods sugar lows are not fun and the better your informed with just how bad it gets the better you can adjust your diet.
I know I could NEVER eat just applesauce and soda first thing in the morning. I'd be a raging lunatic two hours later.
Other symptoms are headaches, trembling, lightheadedness, and nauscea. At least those are the ones I get I'm sure there are others.

I'm in the same situation and all I can say is I did'nt want to damage what I've spent so long (2years) healing. We buy our own health insurance and the deductable is very high so we would have to foot the bill for most of the tests. So that makes me not want to do it. Then I'm not sure if having the diagnosis would be smart just because your considered a risk for cancers. Health insurance is so high its insane even if your consisdered health.
So save the villi from damage and yourself from pain and forget what a doctor writes on a piece of paper. I agree its not worth it for tax purposes.

I would go grain free. You might have a problems with all of them. Its also a good diet to treat the yeast over growth in your gut. There are many books out there that deal with pain caused by inflammation (also diseases like diabeties and heart diease, cancer, arthritis, etc), from eating grains and other carbs. I know several people who went on the atkins diet only to expirence alot of their pain went away.
The paleolithic diet is a lifestyle people adopt because they believe our bodies have a hard time digesting the lectins that grains have. They are anti nutrients inside the grain itself as a protection so that the grain won't spoil or be eatin by everything, to put it simple terms. Anyway there's alot of good information out there on it if you just google it, or the paleo diet.
I get the pain all across from one hip to the other when I eat a diet high in insoluable fiber. They say its good for you because it's like a brush that cleans the colon but for others like me it hurts to have that kind of abrasion. The fiber from vegetable is much better and easier to pass.
There are many good books on the inflammation syndrome and life without grains. It has helped me so much with the pain.

I know the grain lobbies are among the most powerful in the government. The department of agriculture is devoted to keeping those lobbies happy and is far less interested in the impact of their policies on our nation's health. Look at the food pyramid developed by the USDA, we're told to eat grains more then anything else. You have to wonder why. My suspicious mind says corn and wheat are the two most powerful agricultural lobbies and is continues to grow with corn now being converted into ethanol for automobile.
Your also coming up against the processed food manufactures. They're all about profit margins. They can make virtually anthing out of cheap refined grains and vegetable oils. They taste great and most people can afford them. Unfortunetly people in lower socioeconomic groups buy these foods because they get the most food per dollar. The cost of fresh fruits and vegetable is 100 to 400 times greater per calorie then refined grains, sugars and vegetable oils.
Also the government still provides subsidies to farmers. I don't know alot about it other then they were started to protect the family farm because a significant part of our population worked on farms during the depression era. Today these subsidies are nearly $20 billion per year even though today less then 1 percent of americans work on farms. The two most powerful agricultural lobbies and hence the beneficiaries of these subsidies come from the corn and wheat lobbies. So the USDA food subsidies keep the real prices of grains and starches incredible low and the processed food industry transforms these commodities into extremely palatable, inexpensive foods.
Your also fighting against the medical establishment. They are still convinced dietary fat and cholesterol causes heart disease. The solution in their eyes is to remove sources of colesterol (expecially animal protein) from the diet and replace it with GRAINS and starches. This also fuels the USDA 's famous pyramid even though this recommendation is all wrong according to Walter Willett. In his book Eat, Drink, and Be Healthy. He says "The USDA pyramid is wrong, builted on shady scientific ground,....the USDA pyramid offers wishy-washy, scientifically unfounded advice....nor has it ever been tested to see if it really works" And he's chairman of the Departmant of Public Health at Harvard Medical School.
There is evidence out there that the role of a high glycemic load in your diet produces silent inflammation, obesity, and dype 2 diabeties but any maor change in the status quo would cause a political shake-up and decreased political contribution from the ag industry. This is why you won't get to far with them. They've heard it all before. They've been faced with stronger groups then celiacs with no avail.
The book I just finished was the anti inflammation zone diet by Barry Sears and most of the imformation above is from his book. I hope it helps but also sorry if it discourages you.

Ok my 4 yr old has tested inconclusive for celiac on the blood panel, he doesn't have the genes but does have double set of gluten sensitve gene.....He's been off gluten for 8 months, off casein for 6 months and off soy for 2 months. Eatting has improved, weight has improved, rash is gone but his constipation is still here (when he goes off his miralax meds) and his ab is still destended.
There is only a small minite chance there was cc, no gluten food in our home and all meals are allergen free
What else is going on, any ideas???
He had a rectal biopsy but we didn't get a good enough sample to give the lab. He goes on the 12/6 for an endoscopy & tissue biopsy, upper & lower GI workup/test,& another rectal biopsy.Dr thinks it is Hirsburgs but agrees to keep him on his current diet and she still says she isn't positive he isn't or is celiac.
Oh the constipation problem started 4 years ago when he was 6 months old!
But his ab is still extremely destended??????
Are you using bean type flours? Or even worse would be soy anything. Soy gives me major bloat. The other thing that comes to mind is peanuts, or peanutbutter. Its a legume and hard to digest for some. Its so hard to call because it might be an allergy to something and that can be anything. I've just given you foods that are hard to digest.

Hi Judy,
Well our thanksgiving was nice. Everything turned out great. Was alot of work though
I try to please everyone so I make two stuffings. I have to take the turkey out of the oven and keep it warm for a whole hour so that I can fit sweet potatoes, the stuffings and green bean casserole in there. Its the only time of year I wish I had double ovens.
So guess what happens. Last year I got glutened from thanksgiving because I was too careless with all the c.c. This year I was careful and pulled it off. Well didn't sleep anyway because our dogs both had D. all night.... apparently because turkey was to hard on their tummies. One kept waking us up to go outside every two hours and the other just went all over the house. What a mess! And their longhairs so it sticks to the long fur on the way out.
So hoping for a diarrhea free thanksgiving next year for everybody.

I don't think you feel good until you've been totally gluten free for awhile (and it take time to work out all the kinks).
Your gut has to heal. You can imagine how messed up it is with the symptoms you've described. Also the villi that has been damaged is what you need to fully get the nutrition you need from the food you eat.
Many if not all develop a leaky gut. I don't have the time to explain all what that means except to say it causes food intolerances or allergies. For instance a common intorerance is corn because it's in so many foods. I believe it's because high fructose corn syrup is in everything. So along the way of getting gluten out of your diet you'll have to see if something else is giving you problems and eliminate it for awhile and see if you improve.
Dairy is another big one and so is soy. Most celiac loose the enzymes needed to digest lactose. This is sometimes only temporary.
Nothing wrong with self diagnosis, but if your uncomfortable with it get your testings done now before you go to long with the gluten free diet. I'm probably to late with that advice, but they'll need you to go back to eating gluten for about 6 weeks. Something I choose not to do.

My pie crust was outstanding this time. I used half the pakage of the Gluten Free pantry mix but if you notice if you follow the recipe it has too much fat to mix ratio. So I have the G.F. safe oats that I turn into flour with the cusinart, and added about 3/4 cup to it. It gave it a nice texture and gave it a nice color. But the flavor was so much better too. Everyone loved it.

Everything turned out good this year. The only thing I'd change is to put more salt in the stuffing. I made both tranditional and G.F. stuffings. The G.F. was made with rice bread from the Sillyak bakery. The texture was good but lacked flavor. If you look on the package of crutons from regular brownberry though it contains alot of sodium. So I think I was looking for the same saltiness. So it was a minor error, who needs all the salt anyway.

After a couple of weeks of major setback, I removed corn again (damn!) and ALL REFINED SUGAR (double damn!), as well as all yeast-friendly foods (wine, vinegar, mushroom, aged cheese, grapes, etc). And I am back to feeling much better!
The holidays are just to hard to restrict sweet goodies but I'm going to start the anti candida diet in January. Whenever I do eat to many sweets I won't sleep good. I just stay super alert. So I'll eat just alittle just enough so I don't feel deprieved. I did get the book that was recommended , An Extraordinary Rower To Heal by Bruce Semon and thought it was very good. Not a hard diet to follow at all. In fact I'll be making one pumpkin pie with gluten free crust, ricemilk, and honey and one the regular way.
He does come down hard on vinegars. Also malts, chocolates, and coffee. Anything thats "roasted" is bad. So that includes chocolate, and coffee beans, and peanuts.
This will be the first thanksgiving that I won't have any alcohol in any form.
This will be hard because I use it so I can relax around all the commotion and people.

What do they mean by giving oils with your meals. As a suppliment like fish oils or using oils in your cooking?
Its amazing what they know about digestion. She should be giving seminars to doctors.

Nonfat milk, rice flour, tapioca starch, eggs, sugar, canola oil, yeast, salt, xanthan gum, lemon juice.
Banana, rice flour, sugar, butter, eggs, pecans, brown sugar, soy flour, sweet rice flour, cream, baking soda, natural vanilla flavor, salt, xanthan gum, lemon juice.
Common ingredients are rice, and xanthan gum. I suppose what I would do is bake a banana bread myself using all the ingredients they used except the xanthan gum and see if that bothers you. It wouldn't suprize me if that was it. It's used to keep the bread from falling apart easily giving it a better texture. Its slimey/sticky ish. You really don't need it in the banana bread recipe so you wouldn't miss it.
It would be worth it to find out if this is it. Its not worth it to suffer like that!!!

My addictions have been bread, bakery donuts, and beer. Interesting isn't it. I thought it was a yeast thing but now I don't know. Rice bread has yeast in it and I can stop at one piece. Lets face it wheat taste good, but I'm pretty sure I was also addicted to it.

All I can say is I've had this sharp shooting pain in the rectum but it doesn't happen often enough were I'm worried about it. Usually 3 or 4 times a year. Followed by a BM thats harder to pass or has something sharp in it like an undigested peanut. I also have a hemorroid so I figured I was causing pressure pain irritating it or causing it to swell up.
I hope they find out for you what it is. Are you going to get a colonoscopy? Fun
