  3. I usually do a Mexican food spread, marinated shrimp and chips and salsa for appetizers, tamales with chili, a quesadilla bar, Spanish rice, refried beans, cauliflower salad.   24. I know fresh is best, but the only way I am able to pull a lot of these meals off is by cooking ahead and freezing. I do this with rice too, I make a big batch of rice up and freeze in 1/2 cup portions. I much prefer eating rice freshly cooked out of the rice cooker, it's all fluffy, and warm, and yummy, but this way it's fast and easy to pull...
