  1. Thanks for your input. If anyone knows which flour(s) I could use in place of teff, millet, or amaranth that would be appreciated too...I think I have every other flour known to mankind in my refrigerator! Maybe it would just be easier to purchase the extra flours!!
  2. As I venture more into the baking world, I'm wondering what gluten-free flours can be substituted with other gluten-free flours? I went out and bought innumerable different flours. Now in various recipes they will call for one of the flour variations (e.g. teff or millet) that I do not have. Does anyone out there have a basic chart or guideline for substituting...

  4. I finally got it...straight from the horse's mouth...!!! The dextrin in M&M's is derived from corn...so I can rest easy now in giving these to my daughter! Just thought I'd share!
  5. I find myself referring to Betty Hagman's cookbooks quite often and use them as my "basis." So, here's what Bette Hagman has to say about: Caramel color: can be made from dextrose (corn), invert sugar, lactose, molasses, or sucrose (beet or cane). These are all gluten-free. Caramel color made in the U.S. and Canada is made from these sources. Imported...
  6. That's my question...what is the source of the dextrin in M&M's? Everyone is telling me that they're gluten-free but no one is giving me any factual information about the source of the dextrin listed on the ingredients. I'm not sure when I can ignore the ingredients' listing - like I'm told to do with the m&m's - and when I can't. I would think...
  7. My husband called the company. M&M's are NOT given in their list of gluten-free products.
  8. Dextrin is listed in Bette Hagman's cookbooks as something to avoid...it can be made from rice, etc., so if it's not specified we are to assume that it's made from wheat. M&M's milk chocolate candies have dextrin listed clearly on the ingredients...I just bought these 2 days ago. So...who's right? Maltodextrin is made from cornstarch so I know that...
  9. I guess I'm confused...I thought Dextrin was on the "no-no list?" The last M & M's I looked at for my daughter have Dextrin listed boldly in the ingredients' listing. Do we know what kind of dextrin it is and that is why they are thought to be okay?

  11. I'm starting to feel a little more confident about our upcoming trip. thanks for all your input. I found another plug-in cooler at Wal-Mart but still...just another added expense. I think I'll see how this trip goes without one. I hadn't thought of them being loud. We have a suburban so I was thinking maybe I could stash it in the back.

  14. I know that there's a pretty good grocery store available once we get there but I'm not sure to what extent they go to as far as gluten-free food though. The frozen burger idea was great...I'll try that. That would be a great thing to try out on those overly long trips to town too...thanks. Someone just told me about a cooler that plugs into the cigarette...
  15. We have a two week trip scheduled at the end of August. My daughter is gluten-free. It will take us about 3 days to arrive at our destination...along the way we stay with family and friends so we'll be staying in guestrooms on the road as well as when we reach our destination.   16. Jack Daniels' bbq sauce is not gluten-free...per an e-mail from the company last month. If I find their e-mail I'll post it on here. I may have printed it and then deleted it.

I'm new at this...as I'll admit over and over ...but one of the cooks where my daughter will be attending camp (I, of course, am sending my daughter's own food) commented that "such-n-such-a-food won't hurt her 'cause it's only so-many parts per million of gluten in it."   19. My daughter was diagnosed in March as having celiac disease. Since then, I've been relearning how to cook and where to buy groceries! My daughter hasn't progressed severely upon diagnosis.   21. Thanks so much! The recipe that I got the Log Cabin syrup from was a gluten-free recipe! Argh! I'm still very new at this so I have much to learn. Y'all's input was very helpful...I shall pick-up different maple syrup on my next shopping trip.
  22. I've read in recipes that "Log Cabin" maple syrup is okay. What's the difference between the maple syrups?
  23. I've discovered that some ketchups have "tomato paste" listed as the main ingredient and tomato paste quite often can have gluten in it. I know that Heinz ketchup is safe...I called the company and they sent me a list of their products that are gluten-free.

  25. My daughter was diagnosed in March as being celiac and my brain is reeling with the celiac "dos" and "don'ts" as I relearn how to cook and read labels. So...my understanding is that maltodextrin is fine if made in the U.S. or Canada. Dextrin, on the other hand...is not gluten-free...correct?
