I do watch, however, because once, they put it on the bun and then pulled it off - I saw and explained that they needed to start all over, as the littlest bit, etc....   13. You may try bringing a cheap toaster with you, and bringing gluten-free bread, peanut butter and jelly. Also, there are gluten-free chicken nuggets you can buy, cook in oven before you go, and then just reheat in microwave.   14. According to what I've read, the average time to diagnose celiac disease in the US is 11 years, in Europe, it's 3 weeks. So, I agree, we need to educate people, including the medical community. There is apparently a radio talk show host in Chicago who is celiac disease as well, but I don't know that for a fact.

There is a good book out for Children on Celiac, which you may not be aware of: Eating Gluten Free with Emily, by Bonnie Kruszka (actually available in the bookstore of this site, and I would imagine available in bookstores near you?) which I thought was very good for kids.   18. The Zojirushi is the best for gluten-free bread that I have found. For gluten-free bread, you really need 2 paddles -- most bread machines just have one.   20. You may be even more upset to learn that Congress is considering cutting wheat from the list of covered allergens in the food labelling bill.   22. I really didn't love any of those gluten-free cereals. The only one I eat is Whole Foods Generic 365 Brand Honey Frosted Flakes. They taste just like I remember Frosted Flakes tasting and whole Foods indicates they are gluten-free.   23. The only sure fire way to diagnose Celiac is to have the biopsy. As others have said, is is painless. You may not get accurate results if your child is on a gluten-free diet before the biopsy. If your child's doctor hasn't told you all of this, I recommend a second opinion. A good gastoenterologist will tell you this. Good Luck.
