Hi Bessie. I hope you are adjusting well. It is a big adjustment. People on a gluten-free diet are no different than gluten eaters with respect to gaining weight. I've been doing the "bunless" burgers at Wendy's and Burger King for years, without ill effect. I just order it that way. I do watch, however, because once, they put it on the bun and then pulled it off - I saw and explained that they needed to start all over, as the littlest bit, etc.... I would strongly advise against this. Even if you choose to give your child oatmeal, it should be Irish Oatmeal that has not been cross-contaminated. (I think McCann's is the brand - white canister with green print). Quaker and HealthValley would not be. Kim. -

You may try bringing a cheap toaster with you, and bringing gluten-free bread, peanut butter and jelly. Also, there are gluten-free chicken nuggets you can buy, cook in oven before you go, and then just reheat in microwave. There are meals in a cup (gluten-free pantry has a few) and Thai noodle bowls that are gluten-free and you just add boiling water... -

According to what I've read, the average time to diagnose celiac disease in the US is 11 years, in Europe, it's 3 weeks. So, I agree, we need to educate people, including the medical community. There is apparently a radio talk show host in Chicago who is celiac disease as well, but I don't know that for a fact. -

Hi Renee. You mention that your coffee is Dunkin Donuts coffee. If it's the coffee made in the donut shop, perhaps there is cross contamination from flour being in the air. I am a lawyer and can offer some help regarding accommodations. Your school most assuredly has a microwave somewhere (most likely, the teacher's lounge). The Zojirushi is the best for gluten-free bread that I have found. For gluten-free bread, you really need 2 paddles -- most bread machines just have one. I use gluten-free Pantry Favorite sandwich bread. If you don't feel like baking your own, Kinnikinnick (www.kinnikinnick.com) has some very good ready made bread. They'll ship to you from Canada...

Hi Deb. Flagbabyds had some good advice for you. I've celiac and gluten-free for 5 years. It can take some people a year for the gluten-free diet to really take hold and your villi to heal. The most likely culprit of your reaction is accidental ingestion of gluten. Also, be sure to check that your hand lotion and lipstick/gloss don't have... -

I really didn't love any of those gluten-free cereals. The only one I eat is Whole Foods Generic 365 Brand Honey Frosted Flakes. They taste just like I remember Frosted Flakes tasting and whole Foods indicates they are gluten-free. The only sure fire way to diagnose Celiac is to have the biopsy. As others have said, is is painless. You may not get accurate results if your child is on a gluten-free diet before the biopsy. If your child's doctor hasn't told you all of this, I recommend a second opinion. A good gastoenterologist will tell you this. Good Luck. -

Hi Chrissy. The only sure fire way to diagnose celiac disease is with a biopsy, which I would strongly recommend you (and your family) have done before you go on the gluten-free diet. I would recommend you all see a gastroenterologist -- it's well worth the money and time. Columbia University has a celiac center -- I know that's a bit far but at least...
