For butter on bread I use Fleischmann's light butter, It taste pretty good. This butter does not work real well in baking cookies and things. I have tried to find a margarine that is soy, peanut, dairy and gluten free to use in cooking and baking but havn't had any luck yet. Oh ya and here are the ingredients for the butter, just incase you wanted to know what was in it.
INGREDIENTS: WATER, CANOLA OIL, PARTIALLY HYDROGENATED CORN OIL, SALT, PROPYLENE GLYCOL MONOSTEARATE AND VEGETABLE MONOGLYCERIDES (EMULSIFIERS), XANTHAN GUM, POTASSIUM SORBATE AND SODIUM BENZOATE AND CALCIUM DISODIUM EDTA (TO PRESERVE FRESHNESS), CITRIC ACID (ACIDULANT), ARTIFICIAL FLAVOR, VITAMIN A PALMITATE, COLORED WITH BETA CAROTENE (SOURCE OF VITAMIN A), VITAMIN D3 ADDED.

You could do apple crisp. I have a different recipe for it, Its good! My Dad who Isn't gluten free loves this stuff.
Heres the recipe if you want it.
Apple Crisp
8 medium Cortland or other cooking apples
1 cup gluten-free flour
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon cinnamon
1/2 cup butter or margarine
Preheat the oven to 375 degrees F.
Peel, core, and cut the apples into thin slices. Place them in a 9 by 13-inch baking dish. In a bowl with a pastry cutter, mix the remaining ingredients until they are well blended and resemble coarse cornmeal. Sprinkle the mixture over the apples, and bake until apples are tender, about 30 to 35 minutes. Serve warm or cold.
I can't have milk because I am allgeric to it so I can't have regular butter so instead I use Fleshmen's light butter. I don't use 8 apples I just use as many as it takes to cover the pan up.

Hi, my church youthgroup is going to a harvest fest and they have paintball there you can play and I was wondering is it ok to play paint ball? I went last year (this was before I found out I was a celiac) and I had to wear a helmet type mask thing over my head and face that other people have worn..Is it safe to wear the helmet mask thing?

This is my favorite recipe. No milk, soy, or peanuts.
True Yeast Bread/Pizza Crust - Adapted from Bette Hagman's Gluten Free Gourmet
3 C. gluten-free flour mix
1/4 c. sugar
3 1/2 tsp. Xanthan gum
1 1/2 tsp. Salt
1/2 c. lukewarm water
1 1/2 Tbs. yeast
1/4 c. oil
1 1/4 c. water (Not too hot, or you'll kill the yeast. You want it to be about baby bath temperature.)
1 tsp. Rice vinegar
3 eggs
Mix flour mix, sugar, xanthan gum, and salt in the bowl of a stand mixer. Dump yeast on top, but don't mix it in. Combine warm water, oil, and vinegar. Pour directly on top of the yeast and let sit for 5 inutes or so. (The yeast should bubble and foam a bit.) Turn the mixer on low, and mix well. Mixture should be slightly warm. Add the eggs, then beat on high speed for 5 minutes. Turn oven to 400 degrees.
For Bread: Spray pans well with Pam. Spoon into pans (or English Muffin rings), and let rise on oven as it heats (about 20 minutes). Bake loaf pan for about 35 minutes. Bake muffin rings about 20 minutes.
For Pizza: Spray 2 13x18 jelly roll pans with Pam. Place half of the dough on each pan. Spray the top of the dough with Pam, and press the dough flat in the pan. (Or just wet your hands with water to spread it.) You don't have to let it raise. Bake about 10 minutes (til top is golden brown). Remove from oven. Top with sauce, cheese, and toppings. Return to oven and bake until cheese is melted - about 15 minutes. (For thicker crusts, use smaller pans.)
After it cools, cut bread. Refrigerate or freeze in ziplock bags. Reheat the number of slices you need in the microwave for 10 - 30 seconds (depending on your microwave).
Bette Hagman's gluten-free mix:
6 c. rice flour
2 c. potato starch (not potato flour)
1 c. tapioca starch

I was looking online for a gluten-free sandwich bread recipe and found this Monkey Bread recipe instead and thought I would share it with you.
Monkey Bread
1 bag Gluten Free Pantry Country French Bread Mix (#30)
1/2 tsp. salt
2 Tbs. sugar
1 yeast packet (enclosed) or 2 1/4 tsp. yeast
1 3/4 cup warm water
1 tsp. cider vinegar
1/3 cup oil
2 eggs plus 1 egg white
1 bag GFP Crisp and Crumble Topping (#125)
5 Tbs. softened margarine
Preheat oven to 375°. Spray a bundt pan with vegetable oil. In mixer, combine bread mix, salt, sugar, and yeast. Combine water, vinegar, oil and eggs. Add to flour mixture and beat 2 minutes. Meanwhile, with a fork, combine topping mix with margarine.
Using a medium size scoop, drop balls of dough into bundt pan. (Tip: Spray scoop with vegetable oil). When bottom of pan is completely covered with dough, sprinkle some topping over dough. Continue to layer balls of dough and topping until all the dough is used. Make sure to sprinkle a little extra topping as the final layer. Cover with plastic wrap. Let sit in a warm place 30 to 40 minutes or until dough rises close to top of pan. Bake 40 minutes in oven.
Remove from oven and allow to cool on wire rack. Remove from pan. To serve, pull apart the balls of dough with your fingers.

I want to make some bread and I can't find any recipes. I found one but they use dry milk in it and I can't have milk. What could I use instead of the dry milk? Or does anyone have any good recipes? I am also allgeric to soy and peanuts, so I can't have any bread with that in it.

ohh I did not know that goat cheese still has casein in it, thank you for telling me that! I would like to put cheese on pizza or stuffed shells things like that but I'm not sure what to use instead of cheese.

I cannot have dairy at all and I was wondering what can I use to replace cheese? would goat cheese work?

Walden Farm's has some really good products that are gluten-free. I have only tried the Choclate syrup but its really good! I put it in plain rice milk and made choclate milk its way better then the actucal thing. They also have a website if you want to check them out its. www.waldenfarms.com Enjoy!

Hi AnnaBelle, It is hard at first I'm still learning. I havn't been diagnosed for that long and am still in the progress of healing. I also have multiple food allgeries and being a celiac looks easy compared to all the allergies I have and all the other foods I have to avoid like soy, dairy, and peanuts. Soy is in like everything.

You could try Orange Peel extract. It works for heartburn.
Also, try taking Digestive Enzymes, found in a healthfood store. Just make sure they are free of the allergens you can't have. They do work good.
I am not sure what pain you are referring to. What does it feel like? Also Peppermint tea can be soothing when your stomach is cramping. Chamomile tea is also soothing.

The pain feels like a sharp pain its hard to explain..I think its from the soy I accidentally had soy yesterday and that stuff really hurts my tummy and messes me up.

Make sure you get the avocadoes when they are turning a browner color and they slightly give when pushed on. I like the Haas avocadoes the best. Sam's Club sells them in a pack of 5 alot of the time and they are much cheaper.
I just cut them in half and take the seed out, salt and eat with a spoon. Also they are great if you remove the contents, put on a plate, smash with a fork and salt. Dip corn chips or tortilla's in them. Guacamole is good too, but I don't know the recipe right off hand. YOU could Google a recipe for it. I also slice them and put on sandwiches. Very good. I love them! We also eat them on taco salads, salads and with enchilada's.
Almonds are good nut to eat. You can grind them and put them on hot cereal. That way you get more of them.
Also smoothies made with yogurt are good and you can add Flaxseed oil for fat. I am not sure what kind of yogurt you would add, since you can't have dairy or soy. Maybe Goat yogurt. Do they make that?? Not sure.
I use Frozen Banana's, Frozen strawberries, blueberries, Orange juice, yogurt and flaxseed oil. My kids love these.
HOpe you figure out what works for you. How long have you been gluten free? It takes awhile to heal and sometimes even when you are gluten free you have alot of stomach aches for awhile. Be sure you are being very careful and not getting any cross contamination from gluten ( you may already be doing this).

I'm not really sure how long I have been gluten free I think about a month or so...Yesterday I accidentally had soy though so I don't feel the greatest now. Soy is in everything its hard to watch out for it.
