  1. I am so shocked and outraged that something this ridiculous can be allowed! As a mother who just spent the afternoon at the lab "abusing my daughter by having lots of blood drawn for celiac testing per drs orders" I don't understand how they would think you would have tests done for the fun of it. My DH has celiac and so does my DS and Kirsten is showing...
  2. When I buy the corn tortillas I put 4 in each ziploc baggie to freeze so I can easily get how many I need at a time. (Our grocery store only carries them in packs of 48 or 50. DH likes the white corn better than the yellow corn tortillas and they seem a little less brittle. Kendra
  3. I just wanted to thank you for posting this menu. We went yesterday and DH and DS had something to eat and I finally got to go to a different restaurant for a change. YEAH ! Kendra
  4. It is funny that you are posting about this--I have the same cookong situation coming up this week too. My DH survived on egg rolls and frozen burritos when I visited my family for a week before his diagnosis. He doesn't cook either so I made up a batch of red beans and rice for 5 meals, cooked a pork roast yesterday, froze a serving of cabbage casserole...
  5. I agree the waiting stinks. I am glad he is doing well after all that poking. I will be looking for your post on what you find out. We go to another dr on Monday for my DD. Her blood work wasn't negative like I had been told and dr admitted I know more about celiac than he does so he referred me on. Hopefully we can get Kirsten diagnosed so we can...
  6. I don't know for sure if my DD has it--we are still in the testing process with her but my DH and I are strongly suspecting that is the culprit. My DS and DH have celiac. An example of someone who outwardly doesn't look like a child with celiac would be my DS. He is talk and built for his age (he is almost 4) He was 10 pound 15 ounces at birth and has...
  7. When I took Kirsten to the dr today for 18 month well baby check up I asked to see our actual lab results since all they had told me was that we both had negative results. Well, hers were not as obviously negative as the nurse had implied on the phone. Her Gliadin Antibody (IGA) was less than 3 with is obviously negative since anything under 11 is negative...
  8. Both my DH and DS were diagnosed by positive blood test only. Our doctor said you would only have positive blood test if you had celiac and no matter how much damage you have the gluten free diet is still required. Unfortunately DD test came back with not so clear results so he is sending us to another doctor. I agree with Vincent to start the...
  9. Hopefully the results will come back soon. The waiting is the worst. My DH was diagnosed first and then my DS. We tested me and DD but both blood works came back negative. Still exploring other options with my daughter because we think is was a false negative. One upside of having 2 celiacs in the house has been that it is a lot easier for Luke since...
  10. Hopefully your sister will grow up soon and figure out that both of your kids would benefit from the whole family's support. I know how frustrating it is to have a family revolve around one siblings needs and wshes. (my sister in law is TOP priority for my MIL) Hopefully your son's appointment will go well tomorrow and they won't need to do the scope...
  11. I couldn't find anything on the web for nutrition so I emailed them. Here is what they replied: Thank you for your email. Unfortunately we believe that over 99% of our products including our sauces contain small to medium amounts of gluten. I hope this information helps. So my DH has been assuming wrong when he thought ordering something with a...
  12. DH used to eat the fries too but when I checked the Wendy's website they are not listed as gluten-free. They do have a good gluten-free menu on the web if you want to look at it. There were more choices than I was expecting. At least the Frostys are gluten-free. DH and DS love those. Kendra
  13. Tanya and family: Just wanted to let you know that we've been praying and are so glad that all has gone well so far. Will continue to pray for a full recovery. Hugs! Kendra
  14. Andrea, I called our insurance company this morning and the lady I talked to had never heard of celiac. She of course said Enterolab was out of network, etc and wanted me to find out the billing procedure and diagnosis codes they use for their billing of labs. She couldn't find if that kind of testing was covered since it is so unusual and thought that...
  15. Shelley Case says in her Gluten-Free Diet A Comprehensive Resourse Guide that US labeling laws say that if Maltodextrin is drerived from wheat it needs to be labeled Wheat maltodextrin. She also says that although maltodextrin may be derived from wheat it is renedered gluten-free by the time it is processed. Kendra
  16. Nurse told me today that Kirsten and I came back fine--no celiac according to the blood test. I am still not convinced that she doesn't have it. She still is having lots of D and varies with constipation too. Should we save up for enterolab? Wait a couple of years and try bloodwork again or just start her on the diet too and forget a diagnosis? I am...
  17. I called the dr today and his nurse said that both Kirsten and I are fine. She didn't tell me the score but just that we don't have celiac according to the blood test. DH says we should just wait a couple years and try again. (He has done no research whatsoever about his condition and relies on me to maintain his gluten-free diet. ) We diagnosed DS last...
  18. I just wanted to add that I recently bought Shelley Case's Gluten-Free Diet A Comprehensive Resource Guide Expanded Edition. Our dietician had recommended it when Jason got diagnosed back in Oct but it was out of print right then. This book helped me a lot to know how to read labels better as she has researched how things are to be labeled in US and Candada...
  19. I am a Bette Hagman fan since she has helped me find edible food for my family. She suggests when using xanthan gum Bread: 1 scant teaspoon per cup of flour Cakes: 1/2 teaspoon per cup of flour Cookies: 1/4 teaspoon per cup of flour I haven't been too adventurous on trying to convert but have made cornbread, pumpkin bars, and shortcake with...
  20. My family likes the Four Flour Bread on pages 42-43. You mix up the dry ingredients on page 41 and then just measure up what you need to make it in your machine. My machine will make the small or medium batch but NOT the large. (I tried it the first time and spend over an hour trying to clean up the mess!) I put liquids, dry mixture and yeast on top like...
  21. Thank you so much for your ideas and encouragement that sometime this is going to happen. How long after your daughter was gluten-free did she start getting normal stools? As he nears his 4th birthday in Sept it is hard not to feel frustrated and pressured to get him potty trained. I keep having to remind myself that he still has D and doesn't seem to...
  22. Christian, My husband has been gluten-free since last October. He started gradually feeling better after a couple months and really noticed a difference after 6 months. (His main symptom was D) Just the other day he commented how nice it is to be feeling better and to only have occasional bouts of D. He was so worried when he had to fly that he would...
  23. I haven't tried the boughten bread--I bake it for my husband and son-but the one thing my mom bought last time we were visiting that actually tasted normal (like white dinner rolls that aren't gluten-free) was EnerG Foods Tapioca dinner rolls. My son was diagnosed a month ago so he hasn't totally adjusted to his "wonderful" new diet but he pigged out on...
  24. I couldn't get Authentic Foods stuff here in KS without ordering it on the internet so I used Bob's Red Mill Garbanzo Fava Bean Flour. I made Bette's 4 flour blend with it and we are really pleased. I got a small bag at our health food store and then ordered a bunch directly from Bob's Red Mill. (Shipping wasn't the cheapest but it was still cheaper than...
  25. Gluten Free Gourmet Bakes Bread: I use Bette's Four Flour Bread Mix on pg 41 and then the recipe on pages 42-43. I tried quite a few other recipes and this seems to hold together pretty well and is a lot easier because you can mix up quite a lot of the dry ingredients at once and then just measure how much you need each time instead of getting out a ton...
