Lucky Gluten-Free Spring Rolls

Something I definitely miss since going gluten-free are spring rolls. Rarely can I find a good gluten-free spring roll. I was definitely feeling lucky when I recently tried Original Gluten-Free Spring Rolls by Lucky Foods.

The rolls are super easy to prepare—mine were ready in around 10 minutes at 375F in a toaster oven. The rolls far exceeded my expectations, and were crispy and delicious. They are an outstanding cross-over product, and you would never know that they are gluten-free.

The dipping sauce that came with them is also fantastic, and the rolls are vegan as well.

Problem I've found with Asian markets where I live (central PA) is that there is ZERO BRAND ALLEGIANCE on the part of store owners. You can find some gluten-free fish-balls in June 2015 and never see that brand again until May 2017. Working in an Asian restaurant, I see the same thing: the "Chinatown trucks" deliver whatever brand they happen to have at the time. So we can never have a consistent GF menu for our clientele, which is incredibly frustrating! Our "Chinatown" trucks originate from NYC and Philadelphia. Wishing there was some sort of liaison who could explain to the shipping companies how frustrating it is to never buy the same product twice in a year.

If your concerned on wheat/gluten, see about getting a actual celiac blood test done, you have to be eating wheat for the test to be accurate. After that you will need the follow up endoscope and biopsy. http://www.cureceliacdisease.org/screening/

Two options for online noodles that are lower carb, the cellophane noodles as suggested but I really do swear by Miracle Noodles which are No to low carb. They have and adjustment phase...they are pure fiber noodles. They can cause issues if your not used to them, or if you have bad gut bacteria....
