    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Celiac.com 07/23/2008 - Folks who follow a gluten-free diet can take comfort that the Codex Alimantarius, the international body responsible for setting food safety standards, has moved a step closer to adopting the gluten-free standards they drafted in November 2007, and their new standards are, for the most part, in-line with the proposed FDA regulations. However, those hoping for speedy adoption of similar standards by the FDA will just have to wait until the FDA takes one last round of public comment and evaluates safety standards used in developing the standards. Certainly, anticipation has been running high, as several blogs and otheronline sources have wrongly claimed that the new FDA standards will go intoeffect in August 2008.
From June 30 to July 5, 2008, the Codex Alimentarius...

Domino's Pizza Offers Gluten-Free Crust? I Think Not!
Celiac.com 10/19/2017 - When I first saw the big advertisement that came through the mail I thought, "Wow, we are really getting somewhere!" However, when I read their advertisement my mind was quickly changed by what seems like false advertising.
It reads like a great deal of boasting, followed by the "disclaimer" (At the bottom. Who reads to the end of an advertisement?)
    Here's the disclaimer:

"Domino's pizza made with a Gluten Free Crust is prepared in a common kitchen with the risk of gluten exposure. Therefore, Domino's DOES NOT recommend this pizza for customers with celiac disease. Customers with gluten sensitivities should exercise judgment in consuming this pizza."
If I hadn't read that disclaimer, I could have gone out that night and purchased a Domino's Gluten...

Gluten-Free Restaurant Food Often Contains Gluten
Celiac.com 04/05/2019 - Avoiding gluten is literally the most important dietary practice for people with celiac disease. A gluten-free diet is the only way to avoid major health problems down the line.
Until now, anyone on a gluten-free diet looking to eat food in restaurants had to rely on lots of detective work, gathering information from menus, word of mouth, intuition, and restaurant workers' advice, with little or no supporting data.
Portable Gluten Detection Data Drives Restaurant Study
With the development of handheld gluten detection devices, like Nima, it’s now possible to take some of the guesswork out of equation by testing small bits of food on site in real time before it is consumed.
A team of researchers recently analyzed data from Nima portable gl...

    DiGiorno Debuts Gluten-Free Frozen Pizza
06/20/2024 - Update: DiGiorno Gluten Free Pizza was reformulated, and is now 100% gluten AND wheat-free. Gluten-free wheat starch is no longer used in the product, and I can say that the new forumula tastes outstanding! This excellent gluten-free pizza is widely available, and I get it at Target.
    Original Article:
Celiac.com 04/19/2021 (Updated 05/08/2021) - Warning: DiGiorno "Gluten-Free" Pizza contains wheat starch that, according to the box: "...has been processed to allow this food to meet the Food and Drug Administration (FDA) requirements for gluten-free foods." Celiac.com is now looking into the possibility that the labeling regulations in the USA may have changed, as products that contain wheat, even if it has been rendered gluten-free to below 20ppm, have not been...
