    Another part of the immune reaction to gluten in someone with celiac disease is the release of molecules called cytokines into the bloodstream.  When the body overreacts these can have systemic inflammatory effects.
    Thanks for your responses, both of you.  The thing with me is, I pretty much have zero symptoms, and I love beer, so I am trying to justify being able to have a real beer once a month or something.  Since beer is made from barley and my test said I was not allergic to it, I was hoping I would be able to drink it.
    Gluten and Joint Inflammation When a person with celiac disease or a gluten sensitivity eats gluten (gliadin and glutenin proteins) the immune system jumps into action, causing inflammation. This inflammation can affect the body's organs and soft tissue. This is what happens to me and I never know how much I have ingested. The lesser amounts of gluten obviously causes less of a response...
