I mentioned to some of you that although I seemed to have lost chocolate somewhere along the way, I was successfully eating a gluten-free, corn-free chocolate ice cream So I decided to buy some of those incredibly delicious Udi's double chocolate muffins.

 

Well, I had one last Friday and had no problems whatsoever.

 

Then I ate one for breakfast yesterday. By noontime I was tethered to the bathroom. :angry: This continued through last night. Got up this morning and everything is fine. I know it was the muffin because, well, I could SEE it at noontime if you know what I mean. Each little bite.

 

I'm thinking that maybe it was because on Friday I had it after lunch, and yesterday was on an empty stomach? I KNOW it wasn't CC - it's Udi's.

 

Anybody else ever have trouble with something like this on an empty stomach? I am FINALLY taking Sunday's off, starting this week. I'm going to a music event that ends at three. Then I thought I'd try eating another muffin and see what happens. I'll be home for the rest of the night so I won't have to face any "emergencies".

 

I know these muffins aren't vital, but darn it, it's so nice to have a portable treat to take when I go to someone's house. I have to go to a birthday party in a couple of weeks and it'd be nice to have "cake" along with the rest of the guests. If I can't, I can't. No big deal. Lord knows I have sat and watched others eat cake many times before. I always console myself with ice cream when I get home. :)

Dang Barty.  I sure hope the next muffin test goes better.  I freakin love those double choco muffins.  I don't have a problem with them or any Udi's products.  I do get wicked heart burn with Kinnikinnick products though.  Have you tried the Udi's blueberry muffins?  Do they get you too?  Maybe just not ready for so much choco yet.

I WISH I could do the blueberry muffins! Blueberries are one of my favorite foods in the world, but this past summer I tried them again and it was a no go - or should I say it was a GO GO (and go and go and go). :lol:

It's OK!!! I can still have vanilla ice cream as long as there's no corn syrup, and where I live we have Blue Bunny All Natural Vanilla. It is SO good and So creamy! AND since they took the cornmeal out of Canyon Bakehouse, I can have that too! Those are my treats, and mighty good ones they are. :D

This is timely because I just tried these muffins for the first time. My boyfriend's mom got them (even though I always insist she not get me stuff when we come to visit) when we went up for early thanksgiving last weekend. I tried some yesterday morning. Not bad at all, but my stomach wasnt up to handling that much that early in the morning. I'll have to try them again.

She also got some kinnininininiks (that's how my pronounce it) doughnuts that were a bit of a bust. Not sure if they hurt the stomach, but definitely didn't help.

 

The Udi's are worth another shot. It's not often I can find soy-free chocolate things. Now if only they weren't in so much excess packaging...

I can't eat corn and I can't remember perfectly, but many of Udi's products they use "corn sryup solids" or something corn-y.....maybe its just that dang corn.....

I've never tried the muffins, but I do find I can really only handle things like that in small doses.

I'll tolerate one serving and be just fine. Then I get excited, try again too soon (like the next day) and things go down hill... So I try to limit imitation processed stuff to once or twice a week and never two days in a row.

I haven't quite figured out what ingredient(s) I'm reacting to, but the one and done rule seems to work for me for now.

Salax, there is a bit of corn starch in them, but no corn syrup solids. I have gotten to the point where I can handle corn starch. I eat it in other things, like Udi's bread, with no problems.

 

Pugmug (love the name, by the way!), I went five days between servings. I think it really was because they are too rich with chocolate to handle on an empty stomach. I'll find out on Sunday when I try one for dessert.

 Lucky duck! LOL I can't handle anything with corn except a medication (pill size) with corn as a binder, otherwise, the pain cometh.

I've been in the process of eating one all morning. They're huge! and tasty. but a whole one at once is a little much. It seems to be treating me ok, though I doubt I'll ever buy them for myself (the idea of them being imported from Denver?? and being in a giant tray and etc etc is kind of unappealing to me. Usually if I buy baked goods, it's from a local bakery)

Pegleg, the ones I buy are only the size of a cupcake and they come four to a pack. And since there is nothing like a gluten-free bakery here, and since I'm not all that far from Denver, I don't mind a bit. I am "cooking challenged", and if I can't buy it, odds are I'll never have it.

 

I suppose that now I am taking Sundays off again, I could buy a Betty Crocker cake mix and bake a cake. But I'd have to buy a pan to cook it in. And besides, they are on a shelf tucked in the middle of all the gluteny cake mixes at the store here. Too much chance of CC.

Ah, gotcha! Hopefully it was just the empty stomach then. They sound delish!

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
