Bread, How To Master The Top?

Greetings,

 

I am Chris, a Chef and my mother has recently come down to be celiac.

I am trying to somewhat master bread for her as she is having problems finding a nice one.

 

I just had my third attempt at making one and the texture is great, the flavor is nice, But the top of the bread is just cracked and is unusable, making it hard to cut etc.

 

I was wondering if anyone has had this problem and solved it?

 

I am blending my own flours, mostly a mix of Sorghum flour, which I havnt used in my best batch, as we are not liking the after taste of it.

Buckwheat flour, which again I didn't use in the third batch.

White Rice flour

Tapioca Flour 

Potato flour/starch

 

I am using fresh yeast aswell as a bread maker.

 

My past two tries involved a blend of all five flours aswell as Xanthan gum and Milk Powder. 

 

I've been using Open Original Shared Link as a guide, but I just want to not have the cracked top.

 

Please share all your findings, I am very interested in this and would like to master it!

 

Rather long post sorry :)

Chris you might try a couple of things, since the flours you are using don't have the gluten, try mixing the dough longer with a paddle in a large stand mixer. Also powdered psyllium husk helps to hold the moisture in the bread to keep it moist. I use the America's Test kitchen How it can be Gluten Free Cookbook.

I can not resolve your bread issues, but are you being careful about cross contamination? Is this being baked in a dedicated area in a dedicated bread maker?

Read out newbie section under "coping". It contains tips about cooking safely in your kitchen. Just using gluten free ingredients is not enough for someone with celiac disease.

gluten-free bread does not require any kneading. No second rise, either. Try just mixing it on your own and placing it in a regular pan to rise and then bake. I have not looked at a bread maker in years. Is there a quick bread cycle?

So nice that that you want to make bread for your Mom.

Definitely starting the food diary! So many amazing advices. And it’s very scary. It really hits all our soft spots as well as our confidence system. Most doctors I went thought I was underage despite being in my late 20s. Right now I look like am I twelve, but is also this body that’s taking so much, so I might as well love it too!       Thank you so much for the information and kind message! Reading this transformed how I’ve been viewing my efforts and progress. Guess there’s still a lot to celebrate and also heal 😌  Yes, I’ve been taking it! Just recently started taking a multivitamin supplement and separated vitamin D! I also took chewable Iron polymaltose for ferritin deficiency 2 months ago but was unable to absorb any of it.  Thank you again! Hearing such gentle words from the community makes my body and heart more patient and excited for the future.
