Is it gluten fee-sourdough bread

I have been diagnosed as Gluten Sensitive, is there such a thing? Â I do not have Sprue. Also I was told I could have regular sourdough bread as the fermentation alters the reaction in your body. Is this true, as I've spent a fortune finding a good bread that's not dense, or too thin.  Looking for a bread like Texas Toast, to make French Toast.  I have been
diagnosed as Lactose Intolerant.

Hi Bindy,

Welcome! Sourdough bread made from regular flour as gluten in it, therefore being gluten sensitive you might react to it. I would suggest looking around for a sourdough bread that is made from gluten free flour. Personally, I would look around for a gluten free sourdough bread.

Who told you this?  This does not sound right. If you have celiac, any gluten will harm your body whether it is fermented or not. If you are not celiac, gluten will not harm your body but it might make you not feel well.

Whoever told you that, didn't even read the first part of that Italian study correctly.  Lol

because you don't have Celiac, I suppose you can eat what you like and see how you feel?

Here's an explanation -from Gluten Free .watchdog that she has made public 

"NOTE: The study referenced in this write-up is a 2011 study by researchers Greco et al. What the researchers actually report:When two study participants ate baked goods made using extensively hydrolyzed flour (gluten reduced 97% and containing 2,480 ppm gluten) no clinical complaints were reported BUT they developed SUBTOTAL ATROPHY of their intestinal mucosa. In other words (and not surprisingly) these products are NOT safe for people with celiac disease. The researchers write, "Two celiac disease patients consumed 200 g of S1BG that contained ~ 2480 +/- 86 ppm of residual gluten. They had no clinical complaints during the 60 days. One showed increased antibodies and both showed increased CD3 and gamma-delta intraepithelial lymphocytes with subtotal atrophy after challenge.""

This applies to people with Celiac Disease.  People who refrain from eating gluten for other reasons will not get the raised antibodies or intestinal damage of Celiac Disease.

      Thankyou so much for your words.Its a hard battle when a supposed well known hospital whose celiac " specialist " has down played me because my colon looks fine and put it in my medical and so pcp doesn't take seriously. In their eyes we all carry that gene.Im having alot of bad days trying to be positive because of it.

      Hello, no I had to have them re done and then used a liner over the top.  Many dentists are not aware of the celiac effects.  Best of luck.   There is other material, yet, very expensive.
