Really fed up, and need some help

Chinese food often has soy sauce in it.  Soy sauce usually has wheat in it.

There is a skin rash called dermatitis herpetiformis (DH) that some people with celiac get.  DH is very itchy per sufferers and usually shows up symetrically on the body.  IE, a rash on both right and left sides of body.  People with DH sometimes don't test well on  the regular blood antibody tests.  but they can be diagnosed by taking a skin biopsy sample from next to a lesion/welt.

      Shingles is dormant and related to chicken pox when one has had in the past.Shingles comes out when stress is heightened.I had my 3rd Shingles in 2023.

      Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye.
