As healthy as possible frozen meals

Hi Everyone,

I shop at Safeway and Harris Teeter and feel like I’ve got a good bead on what’s what in terms of frozen meals, gluten-free of course. I get Evolve or Evol a lot, and sometimes Amys, and one or two others, but the boxes are gone so I can’t recall their names. But just wanted to check in with everyone to see if I’ve missed any. What I’m looking for is of course gluten-free, but also low sugar, and zero trans fats.

...I make my own, food saver bags, vacuum sealer, throw in veggies, pieces of meat, etc. add a bit of seasonings liquid smoke, sauces etc. Depending on sauce I sometimes freeze first then seal so they are not messy or seal then freeze. All I have to do is take it out poke holes in the bag put it in the microwave and zap it...instant steam pouch.

That sounds good. Do you have a machine that seals without air or do you just use bags? Is it possible to buy bags only?

I remembered the other type of froz food I sometimes get - Saffron Road.

We freeze portions in a regular freezer zip lock bag.

I got a the vacuum sealer on a black Friday sale a few years ago for like $24, and bulk bought some of the rolls you make into bags got the good double sided thick ones.

Shoot. The freezer bag thing, though, was something I hadn't thought of. Space issues, so I won't go out and buy a vacuum sealer. Wish there was another way because that's a good idea.

Mine is really small, cord folds up inside it and fits in a drawer 5.9 x 10.6 x 17.7 inches .Open Original Shared Link

NOW if you want to take a non portable/take with me on trip version. Nordicware makes steam trays for hte microwave, omelette makers, bacon cookers, etc. where you can use their cook ware to fix meals in the microwave. I keep sets to go on trips to cook eggs and stuff in some hotels if I can not take my griddle. Open Original Shared Link

NOTE the cooking plates, omelette trays, etc are epic for making egg tortilla, egg noodles, or egg sheets. You beat the eggs with a hand blender or a good beater and some coconut flour/chiaseed/flax meal and pour in to desired thickness and zap it 1-2mins to make a sheet you can cut into noodles, use as roll up, or tortilla. Adjust ratios for what your using it for I use about 2-3 tbsp flour with 240g of egg and 20-30g of almond milk. I like adding seasonings, extract, non dairy cheeses....I do alot with eggs lol.

I have had luck with some of the Luvo meals, and a company called Blakes makes some good ones, including a gluten-free Shepard's Pie.  There are some frozen Indian meals that are good (TJ's has a Chicken Tikka Masala). Not frozen, but add water and microwave, are some of the Thai rice-noodle 'bowls".  I'll post back with more when I remember them.

A lot of those looked good, but I saw more than one with wheat as an ingredient.

I think I can do some plan ahead meals, and thank you Ennis for the great links to the vaccuum sealer. For now, I just don't have the "bandwidth" to deal with learning all that, and prefer to remain low tech (again, for now). I wish I could figure out how to freeze these plan-ahead meals easily so that I can then re-heat them, also easily.

^Shelf stable read to eat meals you just open the pouch and zap in the microwave all gluten free and mostly carb free.

Yes, only some of the Luvo meals are Gluten Free, but the ones that are taste pretty good.

Ennis_TX, those miracle noodle meals seem like great options!  I'm definitely going to try them.  Thanks for the suggestions!

      So her tissue transglutaminase antibody is almost 4x the upper end of the normal range - likely a real result. The other things you can do besides an endoscopy would be: 1.  Genetic testing.  Unfortunately a large proportion of the population has genes permissive for celiac disease, but only a small proportion of those with the genes have it. With family history it is likely she has the genes. 2.  Try a gluten free diet and see if the symptoms go away AND the antibody levels return to normal. (This is what I would do). Endoscopies aren’t always accurate in patients as young as your daughter. Unfortunately, without an endoscopy, some doctor later in her life may question whether she really has celiac disease or not, and you’ll need to be a fierce mama bear to defend the diagnosis! Be sure you have a good written record of her current pediatrician’s diagnosis. Doing a gluten challenge for an endoscopy later in life could cause a very uncomfortable level of symptoms.   Having yourself, your husband and your son tested would be a great idea.

      here are the lab ranges.  Normal ranges for tissue transglutaminase are: <15.0 Antibody not detected > or = 15.0 Antibody detected normal for endomysial antibody is < 1.5. So she is barely positive but still positive.

      I have been diagnosed with coeliacs disease today after endoscopy, bloods and CT scan. I have also been diagnosed with Mesenteric Panniculitis today. Both of which I believe are autoimmune diseases. I have been told I will need a dexa scan and a repeat CT scan in 6 months. I had not even heard of Mesenteric Panniculitis till today. I don’t know much about it? Has anyone else got both of these.

      The normal ranges can vary for the tissue transglutaminase and gliadin antibody celiac tests because the units aren’t absolute.  Could you please tell us what the normal ranges are for the laboratory used? If her tissue transglutaminase results are 10-fold above the normal range some would diagnose her on that alone.  Endomysial antibody ranges are more standardized, and a titer of 1:5 would usually be normal.  Might that be the normal range and not her result?  Her total immunoglobulin A is normal for her age. (This is tested because if low, then the other IgA tests might not be valid).

      Hello there! New to celiac community, although I have lots of family in it.  My two year old was just diagnosed with celiac disease based on symptoms and bloodwork.  symptoms (swollen belly, stomach hurting, gagging all the time, regular small vomit, fatigue, irritability, bum hurting, etc) she got tests at 18 months and her bloodwork was normal. She just got tested again at 2 1/2  because her symptoms were getting worse and these were her results :   Tissue Transglutaminase Ab, IgA 58.8 Unit/mL (High) Endomysial Antibody IgA Titer 1:5 titer (Abnormal)   Gliadin Antibody IgA < 1.0 Unit/mL Gliadin Antibody IgG 8.5 Unit/mL Immunoglobulin A 66 mg/dL Her regular pediatrician diagnosed her with celiac and told us to put her on the strict gluten free diet and that we wouldn’t do an endoscopy since it was so positive and she is so little (26lbs and two years old). I’m honestly happy with this decision, but my family is saying I should push and get an endoscopy for her. It just seems unnecessary and an endoscopy has its own risks that make me nervous. I’m certain she has celiac especially with it running in mine and my husbands family. We are now thinking of testing ourselves and our 5 year old as well.  anyways what would y’all recommend though? Should we ask for an endoscopy and a GI referral? (We are moving soon in 5 months so I think that’s part of why she didn’t refer us to GI)
