Am I Doing Something Wrong?

I bought Kinnikinnick's pancake mix and I was sooo looking forward to eating them...but when i made them, the pancakes were runny and didn't seem to have the right texture. It seemed like too much liquid or something... I don't know what I did.

Can someone help me? Or does anyone know exactly how they prepare them so they are nice and fluffy?

Pancakes, in general, have a lot to do with the weather. Mine have been runny lately too. I think it depends on the humidity or something. I have made the same mix in the summer and they come up light and fluffy. I have no idea how to fix this problem, just sympathizing!!

FWIW, my recipe for "regular" pancakes used to do the same thing. Some days they'd be thick and puffy, others they'd just run all over the place.

I don't use a mix, but I make pancakes from scratch at least once a week. I have found that it's best to mix in too little liquid at first and then slowly stir in more until the batter is the right consistency.

I use the same pancake mix, and I put in half the liquid and stir well, then add the rest a little at a time so they don't get too runny.

Pretty much, pancake recipes are a guide, not set in stone. Never add the full amount of liquid to start with. Add everything but the water/milk/juice, then add that liquid until you get the right consistency.

Hope this helps....

I have tried several mixes and the one I like best is Pamela's. I think it's the almond flour in it that gives it such good flavor. These always cook up well. I also use them to make muffins of all varities

As someone mentioned weather does play a roll in the cooking of pancakes, but these are never runny, if anything you may have to add more water. If you do need to add morem do so a liittle at a time.

Oats naturally contain a protein called avenin, which is similar to the gluten proteins found in wheat, barley, and rye. While avenin is generally considered safe for most people with celiac disease, some individuals, around 5-10% of celiacs, may also have sensitivity to avenin, leading to symptoms similar to gluten exposure. You may fall into this category, and eliminating them is the best way to figure this out. Some people substitute gluten-free quinoa flakes for oats if they want a hot cereal substitute. If you are interested in summaries of scientific publications on the topic of oats and celiac disease, we have an entire category dedicated to it which is here: https://www.celiac.com/celiac-disease/oats-and-celiac-disease-are-they-gluten-free/
