Thanks for sharing. She is a pioneer in the gluten-free cooking and baking arena. She has really helped many people find yummy foods to eat.

She had a stroke or something a while back and nothing has really been said since her illness. I'm glad to hear she is still alert.

At the GIG conference in Salt Lake, I talked to a friend of Bette's who said she's been confined to a wheelchair and that it is frustrating for her because she is such a go getter. She said that Bette has been slowly working on one more cookbook . . . hope it's true! She certainly did a LOT for gluten-free baking!

      I’ve used tinctures and made my own edibles with gluten-free ingredients to stay safe. Dispensary staff don’t always know about gluten, so I double-check labels or just make my own.

      It's great to hear that there are some good doctors out there, and this is an example of why having a formal diagnosis can definitely be helpful.

      Update: I have a wonderful new gastroenterologist. She wants to be sure there’s nothing more serious, like refractory celiac, going on. She ordered various tests including some micronutrient tests that no one has ever ordered before.  I’m deficient in folate and zinc and starting supplements for both. I’m so glad I decided to go to a new GI!

      Autoimmune diseases tend to cluster. Many of them are found close together on the chromosomes.

      Just giving another update... I was referred to rheumatology, and they suspect that I may also be dealing with fibromyalgia (it has not been formally diagnosed, but just suggested at this point).  So, I am continuing with the anti-inflammatory diet and vitamins and still working to keep getting rid of all these hidden gluten sources, but I also do have another possible explanation for some of the issues that I'm dealing with.
