Grrrr! Don't Know What I Did Wrong!

Ok, so I tried to make a cake tonight. I was watching food network today, and loved the idea of a lowfat chocolate fudge cake with zucchini and applesauce in it (something I like to incorporate in my foods). So I printed out the recipe, and subbed the Betty Crocker cake mix for bette hagman's basic cake mix. I swear i did everything, I even compared Bette's directions to the directions from Food network. Yet, I baked it, and the inside didn't cook. I baked it 40 minutes longer than directed to, checking it every 20 minutes...and it still sucked! Why did it do this? I have had this issue before with breads and muffins, and I don't know what I'm doing wrong. Anyone know?

Here's the recipe just FYI:

2c grated zucchini

1 package choc. cake mix

2 tsp cinnamon

1 large egg

2 egg whites

3/4 c plain yogurt

3/4 c applesauce

and for the cake mix i did:

1 1/4 c flour

2 tsp powder

1/4 tsp soda

1 tsp vanilla

1/2 tsp xanthum

1/2 tsp salt

3/4 c sugar

I mixed everything together in blender except zucchini, which i folded in afterward. I baked it at 350F for 45 minutes, then about 40 minutes longer....

I hate being a cooking noob again!

did you squeeze out the zucchini first? it just seems like an awful lot of liquid for only that much flour...

Hey, look on the bright side.

I would prefer my gluten-free baking to fail any day over messing up and getting glutened :D

Even without adding the liquid from the zuccini that seems like a LOT of liquids.

What size was the Betty Crocker cake mix called for (in ounces), and did yours give the same number of ounces of dry weight? From looking at your recipe, it looks like something that would produce a small single layer, while I know some of those mixes show layer cakes in the photo on the front of the box.

It just seems like you've got an awful lot of liquid ingredients there when you count the zucchini, which will give off a lot of moisture.

      This treatment looks promising. Its aim is to provoke immune tolerance of gluten, possibly curing the disease. It passed the phase 2 trial with flying colours, and I came across a post on Reddit by one of the study volunteers.       Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.
