I just need to vent. I am tired of cooking. I like to cook, thats whats funny, but I don't think I realized how much the eating out a couple times a week was nice until this. I know its a good thing, but I am still getting tired of it. My husband has offered to cook 2 times a week, to give me a break. Thats going to be so nice, I'm the one who's always done it, so this ought to be interesting! (wish us luck ;) ) Thanks for listening to me whine!

The one thing that I really miss is good dining out.... yah know, sauces and such.

Carriefaith has some really good guten free recipies on here. Check it out. Gluten free doesn't have to be boring by no means, just sometimes a little different. Tonight we had Boars's Head smoked sausage (listed as gluten free, yeah for them and we should support them) brocolli (oh, Lister and me <_< ) and a baked potato.

Breakfast for dinner is alway good for us, easy and quick.

Good luck, wish I had someone to cook for me. But, we have a deal, I cook, he does the dishes......I'd rather cook. :)

I just need to vent. I am tired of cooking. I like to cook, thats whats funny, but I don't think I realized how much the eating out a couple times a week was nice until this. Two things help me with this:

1. Cooking larger meals so some days, I don't have to cook at all - just reheat leftovers.

2. Having a 'stash' of 'recipes' that are highly flexible and take *very* little preparation time. Things like bean salad (open a can of beans; chop a tomato, onion, avocado; add spices; eat; have leftovers) or chicken soup (cut up chicken; chop carrots and onions in a cuisinart; combine with with rice and spices and broth; simmer until rice is done; eat; have leftovers) work well for me for that purpose. Then it's like, pardon the language, half-ass cooking, but still from scratch, tasty, and definitely gluten-free.

I was just thinking about this today too. I've been gluten-free since January, so I've become comfortable cooking gluten-free, but it's just the constant cooking. Gotta cook breakfast. Even if it's just toast, which was so easy before, I've got to make sure I baked the bread FOR the toast before I even get to the toast. Then if you cook a real breakfast, you've got to clean the pots and pans afterwards, because you're going to need everything clean again to cook lunch. After lunch you've got to clean everything again so you can cook dinner.

I'm enjoying cooking a lot more than I ever thought I would. I think it's the cleaning the kitchen three times a day that's getting to me. And if I don't, by the end of the day, it's just a disaster.

Don't get me wrong, I do have shortcut meals and granola-type bars for breakfast, snack foods, etc. So it's not like I do full cooking three times a day every day, but still.

It makes you think about how much work it was for our great-grandmothers to put food on the table three times a day every day. And that was when people ate full complete meals every meal. And they didn't even have breadmakers or mixes.

It's a completely different way to live.

Do you know what helps me clean up? If I keep a full sink of dish water available while I'm cooking. (Not the sink with the disposal, though, because I use that while I cook.) Then it's so much easier to drop a dish in the water and clean it up. Things come clean so much faster when they've just barely become dirty!

I like to keep a couple of boxs of Thai Kitchen noodles in my cabinets for when I am not in the mood for cooking a meal from scratch. The meals are really easy....you just add some chicken, beef or tofu and veggies. The kids and DH really like them.

      Testing can't alone be trusted.  Else why would it take so many years of testing and retesting and misdiagnosis to finally be told, yes you have Celiac Disease. As to what to eat, I like pre 1950 style food.  Before the advent of TV dinners.  Fresh food is better for you, and cooking from scratch is cheaper.  Watch Rachel Ray's 30 Minute Meals for how to cook.  Keep in mind that she is not gluten free, but her techniques are awesome.  Just use something else instead of wheat, barley, rye. Dr Fuhrman is a ex cardiologist.  His book Eat to Live and Dr Davis' book Wheatbelly were instrumental in my survival.

      If you have DH you will likely also want to avoid iodine, which is common in seafoods and dairy products, as it can exacerbate symptoms in some people.       I just want to clarify that what I posted is a category of research summaries we've done over the years, and nearly each one shows that there is definitely a connection to celiac disease and migraine headaches. The latest study said: "the study did indicate some potential causal associations between celiac disease and migraine with or without aura, as well as between migraine without aura and ulcerative colitis...this study did not find evidence of a shared genetic basis..."       Two months ago, I started taking Dupixent for dermatitis herpetiformis and it has completely cleared it up. I can't believe it! I have had a terrible painful, intensely itchy rash for over a year despite going fully gluten-free. See if your doctor will prescribe Dupixent. It can be expensive but I am getting it free. When the dermatitis herpetiformis was bad I could not do anything. I just lay in bed covered in ice packs to ease the pain/itching and using way too Clobetasol. Dapsone is also very good for dermatitis herpetiformis (and it is generic). It helped me and the results were immediate but it gave me severe anemia so the Dupixent is better for me. Not sure if it works for everyone. I cannot help with the cause of your stress but from experience I am sure the severe stress is making the celiac and dermatitis herpetiformis worse. Very difficult for you with having children to care for and you being so sick. Would this man be willing to see a family therapist with you? He may be angry at you or imagine that your illness is a psychosomatic excuse not to take care of him. A therapist might help even if he won't go with you. Also do you have any family that you could move in with (with the kids) for a short time to get away? A break may be good for you both.

      @tiffanygosci, Thiamine deficiency is a thing in pregnancy for "normal" people, so it's exponentially more important for those with celiac disease and malabsorption issues.
