gluten-free Condensed Cream Soup

There may be a something just like this already on this board, but I just figured out a great gluten-free condensed cream of mushroom soup knock-off I wanted to share.

heat 3 tbsp of cream cheese up, add 1 3/4 cups milk, and whisk in 3 tbsp. of rice flour and salt to taste (if you want it close to the real thing, you unfortunately have to add a lot of salt). Stir constantly over medium heat until bubbly, keep stirring until the mixture gets very thick. You can then add mushroom chuncks or whatever you want to flavor it with. I added parmisan cheese (1/4 cup) and it really added to the flavor.

I haven't tried yet, but I would think you could maybe put this into zip-lock bags in 2 cup servings and freeze it, then thaw them out when you need a can of soup.

thank you very much, I miss cream of mushroom soup so much, i always used the one with roasted garlic.. the gluten-free ones are so thin and watery

this is a TNT recipe?

*blush* I have to admit to having no idea as to what TNT is....could you fill me in? I'm no so up these things lately.

this one looks more involved but tastier than the one I posted, which is good for a condensed soup substitute in other recipes but wouldn't be good as an actual soup.

i made up the recipe this morning, added 2 cloved crushed garlic, it was very good, thank you so much for sharing, i can't tell you how much I've missed the "cream Of" soups...ran out and bought some ham, so tonight I'm making chicken, ham and cheese roll ups with it..YUM!!

Yea! I'm so glad you enjoyed it!

I've made the recipe as a sauce for another dish, but it hadn't occured to me to use it as a soup substitute until the other day. The texture was just so much like the condensed soup that I can't believe I didn't think of it before!

I'll try it with garlic, yum! :)

      @dmallbee, about 8% of celiacs react to the oat protein avenin like they do to the wheat protein gluten. In addition, there are some cultivars of oats that apparently do actually contain gluten.

      I was diagnosed at 18 months old with celiac and lived without wheat, rye, oats, and barley as instructed by my doctor, Dr. Katz at Boston Children's Hospital in the 60's and 70's. I don't agree nor recommend doctors removing oats from restriction, certified gluten-free or not.  I have eaten certified gluten free oats and have had the usual reactions to gluten.  Please reconsider this with newly diagnosed patients.

      It's great to hear that the trip went well, and the general consensus I hear about gluten-free travel in Europe, including my own experiences, is that it is much easier done in comparison to traveling and eating gluten-free in the USA.

      Safely home from my recent trip to the UK. I had zero gut issues while traveling around this pretty country. Our tour leader was very good at making sure the 2 of us with gluten issues on our tour were well taken care of.  We often got our meals before the rest of the group and adaptations to the menu for us were well thought out and very tasty. I just wish restaurants here in the USA took as much pride in making food that everyone can enjoy. Many of the hotels and pubs we ate at had numerous options that were safe for us with wheat/gluten restrictions to eat.
