Quinoa Or Flouride

After being on a gluten free diet for 6 months, I gradually developed Celiac type symptoms again over about the 7th month and then suddenly became very ill. The new food was quinoa some new vegetables and fruits. I am now down to 94 lbs. and need weight. I have had problems with corn, rice, soy, beans, dairy and of course wheat. Anyone have the same symptoms? Any ideas as to how to gain weight? I feel like I am dying and the doctors don't know what is wrong so they keep sending me to different specialist. My liver enzymes are elevated ALT and AST but not high. My primary doctor has just started me on Nystatin two days ago because he thinks I may have Candida in my digestive tract. He did not do any tests to confirm this. Anyone have any ideas? What should I do for very soft ( not D) bowels? Sorry to be a whiner but I am sooo desperate. If anyone knows of a really good GI doctor. I am willing to travel (especially east coast). Thanks so much. Anne

my diet changes every couple months... as of now, I'm on a diet where I've eliminated all of the foods you listed and pretty much just eat meats and veggies... I've managed to stabilize my weight while being on this diet for about 3 months now although I eat quite a lot during the day (6-7 meals per day)..

I guess there are a number of questions to ask to assess your situation: did you lose weight during the first 6 months gluten-free and was it gradual or disproportionately high weight loss at certain times during this 6 month time span? are you currently losing weight or has it stabilized?

more important than actually gaining weight right now is stabilizing your weight.. after that, you can attempt to put on a few pounds... what you should do is keep track of what causes your most rapid weight loss and try to steer away from these causes...

going on a candida diet and taking antifungals may prove beneficial in resolving some of your symptoms but you probably should be as diligent as possible on the diet to prevent losing more weight... some things you can try to keep/put on weight are coconut oil/milk (coconut oil is actually a natural source of caprylic acid and you may potentially experience a die-off type reaction due to its antifungal properties) and nuts such as cashews... you might also be okay eating some alternative grain sources like buckwheat, millet, amaranth... if you want some more ideas while on a candida diet you can check out Open Original Shared Link ... there is a forum on the site if you want to ask any questions or read what others do..

if you try eating some of these foods like cashews or amaranth or whatever and find your body doesn't seem to agree with them, don't sweat it too much.. I find that my body is overly sensitive to a number of foods now and even though one would intuitively think they would be more apt to help a person gain weight, I find eating them counterproductive to maintaining my weight...

I don't know how familiar you are with candida.. hopefully your doctor described it to you if he's prescribing Nystatin... you may experience die-off reactions as the candida is released into your system over the next few days or week... this die-off reaction should plateau and become lesser in its effect after a week or so.. if you experience a die-off and it keeps lasting, then I would contact your doctor and discuss this with him...

since you're starting a number of things at one time (ie. Nystatin, a probiotic, digestive enzyme, etc. in addition to any different foods), just try and trust yourself if you feel like something is not agreeable with you... easier said than done but it wouldn't be as much fun if this wasn't the case B)

I'm not familiar with the elevated liver enzyme levels so I can't comment on those.. hope you get some more answers and better understanding of your situation...

I react to fluoride and completely avoid it. It started when I fist got sick and it was one of the first things I noticed having reactions to. When I brushed my teeth I'd get neurological symptoms and eventually figured out it was the fluoride...so I dont use toothpaste with fluoride and I dont drink water which contains fluoride.

Unfortunately my body got really toxic and I started having noticeable reactions to all neurotoxins.....fluoride is just one of them.

I also react to Quinoa. I cant tell you exactly why though.

It does contain a coating of a natural soapy-like chemical called saponin. Its suppossed to be rinsed off before eating.

I'm highly sensitive to alot of things so I'm not exactly sure what by body doesnt like about quinoa...so I just dont eat it. Which is no big loss to me at all. I think quinoa is gross. :P

I have not reacted to fluoride or quinoa.

I recently lost a lot of weight too (I went down 3 sizes and fit into my daughter's clothes). I found out that I was reacting very negatively to pesticide residues in rice and other foods. I switched to organic foods and I feel a lot better. For the first time in a long time my bowel movements are normal again. I also stay away from fluoridated water and anything with fluoride in it. Anyway, I hope it helps. Best of luck.

I've had really strong reactions to fluoride. I'm originally from Europe and grew up in the UK and Belgium, where they don't add fluoride to the water. When I first moved to the States I had 8 months of unexplained D (10x/day)... I was drinking filtered Brita water. When my D disappeared on going to Europe and promptly returned when I came back to the States, I decided to switch to mineral (or Reverse Osmosis) water.

One time recently, I even got a reaction after just having one cup of tea out (so with tap water). It is impossible to avoid completely (soup, juices, milk substitutes...) but if I drink mineral water at home and order sparkling water when at restaurants, I no longer get D.

Good luck!

Josie

@Joe R Thanks for clarifying! That's what I've heard, too, about Italy, but I've never been, sad face. Almost no one on these boards would recommend the approach of your GI doc, and would instead stick with yours. (Maybe if a "glutening" causes so many discomforts and inconveniences that it just overwhelms your life, and you have nothing else to do...maybe.) But, generally in the clinical setting, coming off prednisone requires a taper, as suddenly quitting can cause problems. Anyway, good for you!

I am 58 years old and was diagnosed two years ago with Celiac Disease based on an EGD showing lymphocytic infiltrates and blunted villi in my duodenum. Lab work shows a severe IgA deficiency. Is it worthwhile to consult with an immunologist regarding the IgA deficiency?  I don’t seem to have any chronic sinus issues or infections but feel like I should get more information regarding the consequences of not having IgA from an expert. I live in Atlanta and surprisingly I have yet to find an immunologist that specializes in this area. Does anyone have a suggestion as to who I con consult with?  I’m sure that telemedicine consults can easily be accomplished these days if I can’t find a local expert.

I was diagnosed in 1994 with celiac disease by Kaiser with biopsy and was told to stay away from wheat and I'll be just fine.I have and Im not.Had my first baby in 94 and my tolerance level was horrible.Having a celiac episode we all know how its horrible with the vomiting and digestive issues. Never googled because internet wasn't around.Still pushing through that's my normal. In 2001 was busy with my sick baby that went through the ringer with severe chronic Neutropenia it was horrible times he out grew it now almost 24 years old this month. In 2007 still digestive issues had blood drawn and have many food allergies.  told my primary im celiac ( i had primary Dr 25 YEARS up til May 2025.My savior was tramadel thats what my doctor gave me and thats what ive been on up til 2023 stopped when i got covid for the 3rd time to give my body a break. Been through  every test.Gi Dr as well who said I wasn't. celiac in 2024 Ive been glutenfree for 30 years at the time now 31 years. Im going to Standford this year and had breath test and sibo which is positive. I have ulcers on my body and I asked how when it was diagnosed as staph 4 years ago, not wanting to admit its from my dismissed celiac condition. Currently dealing with that.My last job was a bus driver last day of work was in March 2023. I was released from my job because of being out so long dealing with health issues. Disability is not helping at all, no income stressed.Currently doing more test and will be going under again next month with new GI doctor at Standford. Depressed because Im literally falling apart and it seems as if menopause is activating it more. Not eating what im not supposed too, always feeling full, tired, eye sensitivity to sunlight, constant bumps in back of my throat, pain down my left leg. Going through more test. Why is it so hard to get help or is it because I was dismissed all these decades?Should I take legal action?Im Currently not doing well which is keeping me from holding a job and im getting older.I can't push through anymore.Im very much into natural supplements that help but im still declining with one thing after another. What miracle will help so I can get back in the production line to make money.

That was the suggestion from my GI doc but I never book the medicine and maintained a strict gluten free diet. Actually, Italy is much more sensitive to gluten free diets than the US, I found.

@Joe R are you saying that while traveling in Italy as a person with Celiac disease, you are eating gluten-containing foods and taking prednisone to dampen down the flares? Plumbago
