Does anyone else bake with coconut flour?

The coconut banana muffins I made yesterday (recipe below) turned out really well, so...I'd like to make more stuff with it :) Does anyone have any recipes? I can't find many online, and I would hate to experiment with it too much on my own, since it's such an odd flour in the sense that it expands and absorbs so much liquid.

(I used 2 extra tbsp of coconut oil in place of the butter, and rice milk, to make them dairy-free)

Banana Coconut Flour Muffins

1 cup Tropical Traditions Organic Coconut Flour

6 eggs

2 ripe bananas (mashed)

2 Tbsp. melted butter

2 Tbsp. Virgin Coconut oil

2 Tbsp. milk

3 Tbsp. honey

1 tsp. aluminum free baking powder

1/2 tsp. vanilla

1/8 tsp. Himalayan salt

Procedure:

Pre-heat oven at 350 F degrees.

Mix coconut flour and baking powder (put it in separate bowl.) In a mixing bowl, beat eggs gradually, and then add milk, honey, coconut oil, butter, vanilla and salt. Continue mixing. Then add the coconut flour with baking powder and mashed bananas. Blend well. Grease 12 muffin cups with coconut oil. Fill greased muffin cups with the batter.

Bake at 350 degrees F for 20 minutes.

Yield: 12 muffins

Coconut Country Biscuits

When you take a bite of these flaky biscuits, you won't be able to stop thinking of all the ways you can eat them!

Ingredients:

3/4 c. White Rice Flour

1/4 c. Organic Coconut Flour

2 Tbsp. Potato Starch

1 tsp. Sugar

1 Tbsp. Baking Powder

1/4 tsp. Sea Salt

1/4 c. Butter

1/2 c. Buttermilk

Preheat oven to 450

Here's another one I just saw off of Bob's Red Mill website that looks fantastic - almond & coconut, how can you go wrong?

Magically Moist Almond Cake

Ingredients:

3/4 cup Butter, Unsalted

1 cup Sugar

1-1/2 cups Almond Meal/Flour

1/2 cup Organic Coconut Flour

2 tsp Baking Powder

1/4 tsp Sea Salt

4 Eggs

1/2 cup Milk

1 tsp Vanilla

Cream together butter and sugar until smooth. Add in eggs, one at a time, and beat until fully blended in. Add milk and vanilla and mix until combined. In a separate bowl, combine flours, salt and baking powder. Beat the dry ingredients into the wet ingredients and beat until creamy. Spread into a greased 9" X 13" cake pan and bake at 350

I make up my own recipes with coconut flour. Sometimes I cut the coconut flour with rice bran, that works really nicely too. I make a thing called a "Bowl Muffin" which is a muffin you microwave in a bowl and also I've been making coffee cake with coconut flour and rice bran. I can get you the links if you want them. I've found the dough has to be pretty wet to rise well because the coconut flour is so absorbent.

      Yes, being off gluten for 3 months would likely yield negative results. To get accurate testing redone you would need to restart gluten consumption for several weeks (the "gluten challenge") to the tune of at least 10g of gluten daily (about the amount found in 4-6 slices of wheat bread).

      That is one of the tests covered in the article I linked you above.

      Antibodies to Deamidated gliadin peptides.  It is another celiac antibody test. The main test is the one you had, TTG,  But a full panel will also include DGP IgA and IgG.  I was positive on all of them!

      I had been off of gluten for 3 months due to food testing came back that shows gluten intolerance. I had asked my health care provider that I wanted to be tested for celiac before stopping gluten. Once they actually listed it shows my immunoglobulin A was really elevated and on the AB, IGA part showed <1.0. Would this be a false negative given I had not gluten in months? I’m very frustrated that the the test was not done while eating gluten.

      @RMJ what is the DPG test? I think my doctor never had me do that
