Hi all,

Just wanted to let people know about a great gluten free flour I have been using. It is called Tom Sawyer All Purpose Gluten Free Baking Flour. It is wonderful. You substitute this flour one for one in any regular recipe. If you use one cup gold medal flour, use one cup tom sawyer flour. No more mixing flours and gums trying to the right mix. It turns out soft muffins, wonderful cookies, and great bread. It also is suppose to turn out great pizza crust but we use kinnikinnick so I haven't tried it. Anyway, you can only buy it online directly from the company. They have a gluten free factory but do testing anyway. Katharine loves it!

I'll second that! Tom Sawyer flour is the key to my great pancakes (mixed with some teff flour to increase the nutritional content.) The results of everything I'd tried before just didn't compare to the pancakes I made pre-gluten-free....now they do!!

I found Tom Sawyer's flour at the CSA conference in Tuscon last fall and this stuff is truly amazing. I've been gluten free for 4 years and am an ambitious cook. Until I found this flour I had not truly made an "excellent" pizza crust. My mom who knew very little about gluten free cooking bought a bag of this flour and made some excellent dishes while I was visiting for the holidays, and the rest of my family, who had previously thought gluten free items didn't taste all that good, had no idea that everything on the table was gluten free. Whether you're new to the gluten free diet or just want to make your life easier by not stocking 4 or 5 small bags of misc flours in the cupboard, this flour is great! It's currently not sold in any store in California, so all you Californians go to your local health food store or even mainstream grocery store and request that they start carrying this product. And if you do order two 5 pound bags off their website you receive free shipping.

      Let me hasten to add that if you will be undergoing an endoscopy/biopsy, it is critical that you do not begin efforts to reduce gluten beforehand. Doing so will render the results invalid as it will allow the small bowel lining to heal and, therefore, obscure the damage done by celiac disease which is what the biopsy is looking for.

      That’s a really tough situation. A few key points: as mentioned, a gluten challenge does require daily gluten for several weeks to make blood tests meaningful, but negative tests after limited exposure aren’t reliable. Dermatitis herpetiformis can also be tricky to diagnose unless the biopsy is taken from normal-looking skin next to a lesion. Some people with celiac or DH don’t react every time they’re exposed, so lack of symptoms doesn’t rule it out. Given your history and family cancer risk, this is something I’d strongly discuss with a celiac-experienced gastroenterologist or dermatologist before attempting a challenge on your own, so risks and benefits are clearly weighed.

      Concerning the EMA positive result, the EMA was the original blood test developed to detect celiac disease and has largely been replaced by the tTG-IGA which has a similar reliability confidence but is much less expensive to run. Yes, a positive EMA is very strong evidence of celiac disease but not foolproof. In the UK, a tTG-IGA score that is 10x normal or greater will often result in foregoing the endoscopy/biopsy. Weaker positives on the tTG-IGA still trigger the endoscopy/biopsy. That protocol is being considered in the US but is not yet in place.
