Quick Gf Dinner Ideas

I was hoping some of you might have some creative and quick dinner recipes for gluten-free items. I've been luckly enough that my better half is willing to go gluten-free in the house with me. SO he'll eat whatever I cook. (But I think he's wearing down on rice and chicken!!) ;)

As many of you know, you can be quite tired and not motivated too cook an elaborate dinner after a long day of work.

I'm hoping some of you might be able to post ideas for quick gluten-free dinners that will be appetizing. Any crock pot suggestions I can put on to stew in the morning and be ready by dinner would be great!!

I've put a bunch of Open Original Shared Link that are gluten-free (and mostly CF) that are often fairly fast. It mostly boils down to broiling (particularly fish), stir fries, soups, and stews. If you're proficient with chopping, that can mean 1 hour for prep, cooking, eating, and cleaning.

This is a neat thread! B)

O.K....for dinner tonight I'm having:

Crock-pot roast:

Ingredients:

1. boston "rump" roast or other nice juicy roast

2. 8-12 oz. jar of pepperochini peppers (sold near the pickles/olives/relish)

3. 1-2 tsp. chopped garlic (I buy the little jars of prediced garlic)

Spices:

Onion powder/dried onion flakes

garlic powder

black pepper

Prep. time: 5-10 minutes

Cook time: While you are asleep or at work (approx. 8 hrs)/Low heat

Clean time: 5 minutes

Directions:

toss meat in crock pot

sprinkle with spices

push chopped garlic into meat with fork and knife

dump pepperochini's on top

pour water on top until meat is almost covered completely

To complete dinner:

a fresh salad or side of green beans

the roast can be served over white rice (optional)

I have some soup and hot dish recipes.. I gotta go visit this site though, with the recipes...

Anyway with soup you can make it and he can have rolls or bread or crackers and you can have salad of gluten-free rolls. Heres a couple.

Potato Soup-contains dairy

Potatoes *Red skinned are best not bakers)

Milk

Cream optional

half and half optional

butter

salt and pepper.

Usually for 2 people 4-6 spuds, 2-3 cups milk.. this is not an exact recipe.

Peel and cube RED potatoes, as many as you think you will need.

Put in pot, cover with water, add salt to water, bring to boil and cook till done. Drain, add some salt (you will not be able to add enough salt if you dont do it now while the spuds are hot) add 1-3 tb butter, depending your tastes and how much fat you want... Mash some of the potatoes against the side of pot with fork, not all just some. Add enough milk to cover potatoes, add 1/4 cup of cream or 1/2 and 1/2 you can add more too if you want.. put back on low heat, stirring often, bring to just simmer, dont boil. Pepper.. Voila this is good with very finely diced onions added to your soup bowl.

Egg Drop Soup-contains soy

Again not an exact recipe here.. close tho

30-36 oz gluten-free chicken broth

1/2 tsp fresh garlic or 1/4 tsp Garlic POWDER

1/4 tsp FRESH ginger, dont use the spice, its not the same, leave it out if you dont have fresh or the diced in a jar.

1-2 tsp gluten-free soy sauce

2 eggs, beaten

salt and pepper

diced green onions, scallions or chives, about 3 tb optional

Place chicken broth in pan with garlic and ginger, bring to simmer, if you are using fresh garlic or fresh ginger, let simmer for 5-7 mins, covered. Garlic gets sweet and loses that raw flavor if you let it cook. Add soy. While the mixture simmers, take fork and stir in one direction, either clock wise or counter clock wise, while stirring, stream beaten eggs in, they will cook instantly. Remove from heat, serve right away, sprinkle with scallions, green onions (same thing) or chives.

Hamburger, potato hotdish

1 pound ground beef

3 good sized red potatoes, peeled and sliced

1 can Progresso Cream of Mushroom soup

Diced onion or dehydrated onions found on spice aisle.

S & P

Cheddar Cheese, optional

Preheat oven to 400F. Fry burger, onions, salt & pepper till burger is done. Place in bottom of casserole dish or oven proof pan. Arrange spuds in single layer on top, S & P them too. Pour soup over all, cover dish with lid or tinfoil, put in oven, let bake for about 40 mins or until spuds are tender, serve of if using cheese, you uncover, sprinkle with cheese and bake 5-7 mins more. You can also get a lot more veggies in here if you want.. Carrots, just be sure to slice them thin so they cook in the time the spuds cook, or used canned carrots, or canned or frozen corn, peas, mixed veggies, whatever you want. You can do this in crock pot too on low, after you brown the burger.

Mock Scalloped Potatoes and Ham In the crock pot

4-6 red potatoes

Ham any kind, diced

Onions diced, or dehydrated onions

Progresso Cream of Shroom soup

S & P

Peel and dice spuds, add ham, soup, onions, s & P, dump it all in the slow cooker, cook on low.

Chilli in crock pot

1 pound Ground beef

Diced onion or dehydrated

1 large can of tomato sauce

1/2 can of water (swirl it in sauce can to get it all out)

1 tsp of chilli powder, more or less to your taste

1/2 tsp of ground cumin

S & P

Fry the burger with onions, s & p put in crock pot, add rest to crock pot and cook on low all day. You can also add a can of beans, any gluten-free kind if you like that. Serve with sour cream, cheese, chopped onion , chopped chiles..

Round Steak and Gravy

1-2 pounds round steak or tenderized round steak

S & P

1/3 c water

onions, diced, sliced, however you like em

gluten-free beef boullion 1 tsp

can of Progresso Cream of Shroom soup

S & P steaks, fry in pan until just brown. Meat turns out better in the slow cooker if you brown it first.. Remove steak but keep that pan hot, add the water to it and stir stir stir to get all the brown bits up. Add steak, all other ingredients and the water with brown bits to crock pot, cook on low all day. You can add spuds too or carrots. You gotta cook round steak all day or you cannot chew it.

Hobos

Ground beef

onion, sliced

potato sliced

S&P

Form a patty, large one with burger, salt and pepper both sides, put on tinfoil, put one slice of onion on top and several slices of potatoes, s & P it all or it wont taste good, splash of gluten-free worcestershire sauce, seal tinfoil into packet, tight. Place on cookie sheet, put in oven on 400 for about half hour.. You can do this with peice of round steak too, but cook it lower 300 for 2-3 hours. You can also add green peppers, carrots, whatever you like.

Shrimp and Sausage Jambalya (did I spell that right?) <_<

Quick cooking

1 pound raw, shelled and deveined shrimp, big or small, can use precooked too, more on that later.

1 tsp butter, 1 tsp cooking oil, any kind

2-3 cups cooked rice

1 can (large can) Tomato Sauce

1/2 Cup diced celery

1/2 cup diced onion

1/2 C diced green, yellow or red bell pepper

1 tsp of diced garlic

1/2 tsp of chilli powder or to taste

S&P

Smoked sausage, cooked, in a sausage shape, not loose like hamburger... any kind, cut into rounds, small bite sized

add butter and oil to frying pan.. butter gives it flavor and oil raises the burn point of butter. Add celery, pepper, onion, S&P, saute on low for 5- 7 mins, depending on how well done you like your veggies. Add garlic and simmer for 1-2 mins, dont let it get brown!! Burned garlic is awful! Add sausage at same time you add garlic. Add t sauce and chili powder, bring to simmer again. If you are using raw shrimp, put them in and cook 3-4 mins, dont over cook, shrimp is done when it curls up and turns pink, over cooked shrimp is like chewing on a shoe.. if you are using cooked shrimp, just cook long enough to heat through, no more. Serve over rice, this whole thing not including rice cook time takes minutes if you keep chopped veggies on hand. Or just whiz them quick in the food processor if you dont like to chop. The smaller the pieces, the faster it cooks.

      NCGS does not cause damage to the small bowel villi so, if indeed you were not skimping on gluten when you had the antibody blood testing done, it is likely you have celiac disease.

      I will assume you did the gluten challenge properly and were eating a lot of gluten daily for 6-8 weeks before your test, but if not, that could be the issue.       I'm very confused... My blood test came out negative, I checked all antibodies. I suppose my Total IgA levels are normal (132 mg/dl), so the test should be reliable. Still, I'm not relieved as I can't tolerate even a single biscuit. I need to talk to my doctor about whether a duodenal biopsy is necessary. But it is really possible to have intestinal damage despite having a seronegative results? I have really strong symptoms, and I don't want to keep skipping university lectures or being bedridden at home.

      They may want to also eliminate other possible causes for your symptoms/issues and are doing additional tests.  Here is info about blood tests for celiac disease--if positive an endoscopy where biopsies of your intestinal villi are taken to confirm is the typical follow up.

      In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease--and you are above that level. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! May I ask why you've had so many past tTg-IgA tests done, and many of them seem to have been done 3 times during short time intervals?
