First Birthday Cake

I want to make my dd a 1st birthday cake to enjoy but have to find a recipe that is gluten, dairy, soy, corn and nut free. I know this is a lot to eliminate and that is why I am hoping somebody will have an idea for me.

Here's a recipe that I got from FAAN (www.foodallergy.org) that has worked for my daughter. I've modified it to be gluten-free.

Old Glory Cupcakes (Milk, Egg, Peanut, Soy, Nut, Guten Free)

1 cup sugar

1/2 cup milk-free, soy-free margarine, softened

3 T. applesauce, divided

2 tsp. vanilla extract

2 cups Gluten-Free flour blend

2 tsp. xanthan gum

2 tsp. baking powder

1/2 cup water

Preheat oven to 350 degrees. Line muffin tins with paper liners. Mix together gluten-free flour blend, xanthan gum and baking powder. Set aside. In medium bowl, beat sugar and margarine with electric mixer until well combined. Beat in 2 T. applesauce and vanilla extract. Beat in gluten-free flour blend, xanthan gum, baking powder mixture. Beat in remaining applesauce and water until batter is smooth. Spoon into prepared muffin tins, 2/3 full. Bake 20-25 minutes, or until toothpick inserted in center comes out clean. Cool completely before frosting.

If you don't feel like making it from scratch, you could try Namaste brand cake mixes- this is what I made for my son's 1st birthday! :) They have a great spice cake mix or a chocolate cake mix that is good too.

I believe it is free of everything that you need to stay away from.

Then I used Cherrybrook Farms vanilla frosting mix that should be good for you too.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
