I am vegetarian and going gluten free was not difficult but now I am also sensitive to corn and mildly sensitive to rice. My doctor suggested a rotation diet so I am hoping that helps me keep rice in my diet.

I feel like I am running out of foods, I am allergic to peanuts and large amounts of tree nuts give me a stomach ache, same with eggs

I love quinoa and buckwheat and am trying out other alternatives as well but am still having a hard time, anyone have any good recipes (with very simple ingredients to fit in a rotation diet) or advice.

I go on vegiac.com but it seems no one over there has multiple food issues, also please don't tell me to start eating meat I know that option exists.

I understand. Its very hard to find something that is gluten-free and meat, dairy and egg free all at the same time. My 16 year old is trying to be a gluten free-vegan for a month. She is not sick nor allergic to anything but we are watching it. She made it vegan for 10 days so far and almost gluten-free too except for some ritz crackers and some oat granola bars. I have had a hard time finding recipes. She eats melons, corn, beans, potatoes, peanut butter and banana muffins. We think she is allergic to gluten. She had a couple of mild reactions that she never had before. Flashing lights and 2 DH red spots. That shows us she must be allergic. I am going to try a new recipe tomorrow for vegan tortillas and she can have those (if they turn out) with beans or with apple pie filling. She doesn't like the vegan cheese so she put fresh pineapple on her corn tacos ;)

gluten-free/Vegan Banana Bread (I made muffins)

1 1/2 cups brown rice flour (I used sorghum)

1 1/2 cups millet flour

1/3 cup sugar

3 T. ground flax seeds

2 tsp. cinnamon ( I would use less like 1 1/2 tsp)

3 tsp. baking powder

1/2 tsp. xanthan gum

1/2 tsp. salt

3 ripe bananas, mashed

1 1/2 cups water, or rice/soy/almond milk (I used 3/4 cup water and 3/4 cup almond milk)

2/3 cup chopped nuts ( you could omit those and add choc chips or more flax, another T. full)

Combine flours, sugar, flax seed, cinnamon, baking powder, xanthan gum, and salt in a large mixing bowl. Stir in bananas and water or milk. Stir well with a spoon or beat with a mixer for a minute or so. (I used a mixer).

Pour into a greased 8x8" pan or loaf pan. Bake at 350 degrees for 45-60 minutes until center is set. Allow to cool in pan. I used a 6 cup jumbo muffin pan and baked them about 25 minutes and it made 9. Then I made them in 6 jumbo cup and in 6 regular muffin cup pans and it made 6 of each.

1 cup dry red lentils

1/4 tsp cumin powder

1/4 tsp turmeric

1/4 tsp coriander

add water, cook until soft. Salt to taste. Lemon juice? Yum.

I just bought a cookbook called The Gluten-Free Vegan by Susan O'Brien. I haven't tried the recipes yet, but most look pretty easy and she varies the starches and seems to be sensitive to the fact that people may have other sensitivities as well. :D

      I appreciate you validating me because medical is an issue and it's not ok at all they they do this. Some days I just want to call the news media and just call out these doctors especially when they are supposed to be specialist Downplaying when gluten-free when they should know gluten-free is false negative. Now dealing with other issues and still crickets for disability because I show no signs of celiac BECAUSE IM GLUTENFREE! Actively dealing with sibo and skin issues.Depression is the key because thats all they know, im depressed because medical has caused it because of my celiac and related issues. I should have never ever been employed as a bus driver.After 3 years still healing and ZERO income desperately trying to get better but no careteam for celiac other than stay away frim wheat! Now im having care because my head is affected either ms or meningioma in go in tomorrow again for more scans.I know im slowly dying and im looking like a disability chaser

      M&M Peanuts. About the same calories and sugar while M&M Peanuts have fiber, potassium, iron and protein that Tootsie Rolls ("We are currently producing more than 50 million Tootsie Rolls each day.") don't. Click the links to compare nutritional values.  Both are made with sugar, not high fructose corn syrup.  I use them as a gluten free substitute for a peanut butter sandwich.  Try her on grass fed, pasture fed milk. While I get heartburn at night from commercial dairy milk, I do not from 'grassmilk'.

      I see it everyday on my feeds.  They go out and buy gluten-free processed products and wonder why they can't heal their guts.  I don't think they take it as a serious immune disease. They pick up things off the internet which is so far out in left field.  Some days I would just like to scream.  So much better when we had support groups and being able to teach them properly. I just had an EMA blood test because I haven't had one since my Doctor moved away.  Got test results today, doctor ordered a D3 vitamin test.  Now you know what  type of doctors we have.  Now I will have to pay for this test because she just tested my D3 end of December, and still have no idea about my EMA.
