Rhubarb Crisp/crumble

I am looking for a recipe for a rhubarb crisp or crumble. I have a ton of rhubarb and need to use it. I'd like a crust on the bottom and ??? for the top.

Any help would be appreciated.

Is rhubarb in season? I thought it was more of a summer fruit...but I don't know :)

I love rhubarb! I made a great strawberry rhubarb pie a couple years ago, but don't remember where I got the recipe. I think I just followed a Betty Crocker recipe I found in my cookbook, and subbed a gluten-free pie crust.

Mmm, I think I'm going to have to go get some rhubarb and get baking now!

I remember having an apple rhubarb pie that was one of the best fruit pies I've ever had. I occasionally think about making one, but for some reason...

Then there's cherry rhubarb pie...oh boy!

I have a recipe for Rhubarb Compote... let me find it! You serve it on ice cream (or whatever your diet allows)

Do you have an ice cream machine, by chance? You could make a sorbet or granita!

Kay here is my recipe:

Rhubarb Compote with Vanilla Frozen Yogurt

You can use Vanilla soy dream or whatever your diet and tastebuds require

10 large stalks rhubarb (peeled and cut into 1 1/2' chunks)

3 tb sugar

vanilla frozen yogurt

Place the broiler rack to 8' below heating element. Preheat the broiler.

In a medium bowl, toss together rhubarb and the sugar. Spred evenly over a large non-stick baking dish or jelly-roll pan. Broil, stirring once, for 25-30 minutes until very soft but not burned. Remove from the broiler and stir.

Put 1/2 cup of frozen yogurt in each of 4 dessert dishes. Spoon equal portions of rhubarb over the top and serve.

I posted a recipe for rhubarb cake on this forum not to long ago, so it shouldn't be hard to find. I'm going to try a rhubarb crumble, but won't have time till the weekend. I'll let you know if it turns out. I got the first picking out of my patch, and am going to can some this year. Never done that before. I'd rather freeze it, but don't have room. hope you find something.

I made a rhubarb crumble, and it turned out pretty good. Here's the recipe:

crust

4 c. gr flour

1 tsp. cinnomon

1/2 tsp. salt

2 c. sugar

1 1/2 c cold butter

1. combine flour, cin., salt, and sugar

2. cut in butter till crumbly

3. reserve 3 c. pat rest into 9 by 13" pan and bake at 375 for 12 min.

filling

8-10 c chopped rhubarb(about 1 in chop)

3 c. sugar

1/2 c cornstarch (at least - I needed 3/4 c, watery rhubarb)

1/2 tsp. salt

1. put in pot and cook just till thickened ( may have to add more starch)

2. pour onto crust and top with reserved crumbs

3. bake for 40 - 45 min.

1 cup sugar

1 cup orange juice

1 cup water

2 Tbsp lemon juice

1 Tbsp cornstarch

1 tsp pure vanilla extract

      I looked further into Thiamax Vitamin B1 by objective nutrients and read all the great reviews. I think I will give this a try. I noticed only possible side affect is possibly the first week so body adjusts. Life Extensions carries Benfotiamine with Thiamine and the mega one you mentioned. Not sure if both in one is better or seperate. some reviews state a laxative affect as side affect. SHould I take with my super B complex or just these 2 and multivitamin? I will do further research but I appreciate the wonderful explanation you provided on Thiamine.

      Thanks I am mostly looking for everyday staples and easy meal ideas nothing too specialty if possible.

      There are other Celiac genes. HLA DQ 2 and HLA DQ 8 show up in people from Northern European descent.   People of Mediterranean descent have HLA DQ 7.  People of Asian descent have HLA DQ 9.   There's other Indigenous populations that have other HLA genes that code for Celiac disease.   Are you still having symptoms?   What do you include in your diet?  Are you vegetarian? Are you taking any prescription medication?  Omeprazole?  Metformin?   Do you have anemia?  Thyroid problems? Are you taking any vitamins or herbal supplements?

      There are eight essential B vitamins.  They are all water soluble.  Any excess of B vitamins is easily excreted by the kidneys.   Thiamine is Vitamin B 1.  Thiamine is safe and nontoxic even in high doses.  Benfotiamine and TTFD are forms of Thiamine that the body can utilize very easily.   The form of Thiamine in the supplements you mentioned is Thiamine Mononitrate, a form that the body does not absorb well and does not utilize well.  Only about thirty percent of the amount on the label is actually absorbed in the small intestine.  Less than that can actually be used by the body.  Manufacturers add thiamine mononitrate to their products because it's cheap and shelf-stable.  Thiamine and other B vitamins break down when exposed to light and heat and over time.  Thiamine Mononitrate is a form that does not break down over time sitting on a shelf waiting for someone to buy them.  What makes Thiamine Mononitrate shelf stable makes it difficult for the body to turn into a useable form.  In fact, it takes more thiamine to turn it into a useable form.   Gastrointestinal Beriberi is a localized shortage of Thiamine in the gastrointestinal tract.  High carbohydrate meals can result in gastrointestinal symptoms of Gastric Beriberi.  Fiber is a type of carbohydrate.  So, high fiber/carbohydrate snacks could trigger Gastric Beriberi.   Since blood tests for Thiamine and other B vitamins are so inaccurate, the World Health Organization recommends trying Thiamine and looking for health improvement because it's safe and nontoxic.

      Thanks very interesting I have to see if I should take these 2 vitamins along with my multi and super Vit B complex or if its too much or would hurt me. I don't have any other health issues but would love to see if this improves anything especially to feel stronger build muscle.
