I am wondering about Agave syrup/nectar. Does anyone know if it is considered gluten free? I know it is supposed to be just agave, but does anyone know if I should be concerned about how it is processed? Thanks!

I use agave all the time, no ill effects.

Same here. I have used many brands with no problems.

Although I cannot tolerate fruit anymore, I used this on strawberries, peaches, etc. It brings out the sweetness of the fruit. It's also great in teas and drinks, as it dissolves in cold as well as hot, and it's low on the Glycemic index.

I haven't tried it, but I've read some discussions on the board about it, and it seems that not all brands are the same as far as glycemic index. So if you want to use it for the glycemic thing, it's probably a good idea to choose carefully. From what I've read, it's mostly fructose.

Thanks all! I appreciate the quick feedback!!

I am not too worried about the glycemic index (yet!!), but am trying to get away from ultra refined sugars as they seem to bother me now that I am off gluten (sigh).

      Thanks for your assistance.

Get your total IGA checked to make sure your celiac antibody test scores are trustworthy.

I do eat 4 slices of wheat bread with almond butter. Yes it was a reference to my iron consumption.

To give you a frame of reference for pretesting gluten consumption necessary to ensure valid antibody testing, here is the current recommendation for those who have been on a gluten free diet: The daily consumption of at least 10g of gluten (about the amount in 4-6 slices of wheat bread) for at least two weeks. Not sure why you mentioned eggs and chicken. They are not sources of gluten. Was that in reference to dietary iron consumption?

Thanks for your insight. I've been eating wheat bread at least 5 times a week for several months. I've been eating chicken or eggs 5 days a week for at least a year.
