I have been wondering the same thing. I live about 35-45 minutes from Laughlin so my husband and I go to Bullhead a lot for Sam's Club and Target. We go over to Laughlin to walk around or if my parents are visiting. I have been nervous about trying anywhere just because we weren't staying in a hotel and the drive back home is around 45 minutes.

I know on the Laughlin side there is In N Out and an Outback Steakhouse. I know you mentioned you are vegan so maybe their salad?

Couple months ago I was at the Tropicana Express with my husband and parents... I went and asked the Buffet place there about what items were safe and they all looked at my really confused and kept telling me to go ask another person and pointed to that person ha.

I haven't asked anywhere else yet but I would think that Harrah's Casino would know more. I guess I just think that because they have a lot of locations.

On the Bullhead side though there is a Chilis (right across the bridge in the Sam's parking lot), Wendy's and a lot of fast food places and small restaurants.

Hope this helped some.

GOOD LUCK and please post if you end up finding anywhere.

A much better suggestion than that of the new doctor!

Have you considered putting her on the autoimmune protocol diet?

I suggested she just not eat gluten ans still have the scope because of the pain she has been having.  She has lost significant weight and is failure to thrive at almoat 21.  She has had GERD and bleeding ulcers previously and is having those issues now.  She also has systemic sclerosis, so we know those things are issues with that.  We will find her a new doctor back home too.

Not only is the doctor being ridiculous, having her make herself ill so he can re-diagnose her already diagnosed celiac disease, but one week of gluten, while able to cause GI symptoms, might not be enough to cause new damage visible with a biopsy. So if she follows his advice he might say she doesn’t have celiac disease! She needs a different doctor.
