Ugh Must Go Back To The Gluten Free Life Again

lol so im back after 11 months of denial and rebellion, i have decided the rash, allergies (god my nose never stops dripping), D, and sore belly are enough! so its back to lousy bread sticky noodles i go. ha ha all joking aside, i know what needs to be done and will be gratefull this time next month when im feeling better! look foward to being back on the site!

Welcome back! :-D You don't have to live with crappy food that doesn't taste good just because you're eating gluten free. I cook for people all the time and get huge compliments on my cooking, because I have learned what some of the good substitutes are for a lot of things.

As far as noodles, my suggestion is to try a few different brands. I have always had good luck with chinese rice noodles (and they're a lot cheaper than the other brands), but some say they carry a danger of cc. Also, many people who cook pasta of any variety don't know the secret to keeping noodles from sticking - it's using enough water. Always make sure you use a big enough pot so that when boiling, there is at least twice as much water as noodles in the pot. With rice noodles, drain them in the colander and immediately remove and put whatever sauce you are using on them so they don't stick together.

Corn tortillas are the best. You can buy them premade or you can make your own (with a tortilla press), and you can fill them with whatever you want.

This forum is a great resource for gluten free packaged food suggestions and gluten free recipes. You can also find many gluten free recipes on the internet.

I am on a month and getting back on the gluten-free thing even though i guess it wont help me feel better maybe a bit less tired but still

4 times more likely to die with C so yeh, when i go off the rails I google scary stuff and try to get committed again.

I find once the ball is rolling either way i am alright if i get thru a week I am good for 3-6mths if I have a bad day it turns into a bad month

You can always try eating more of the gluten free foods that are not substitutes for "normal foods". Fruits, vegetables, meats... and there are lots of grain/tuber dishes that are gluten free without resorting to Gluten free pizza.

Sometimes the devil can be in the details as well. The gluten free pizza is much better if cooked without anything under it. If you put a solid surface under it, it tends to get doughy.

      I forgot to mention my suspicion of the high amount of glyphosate allowed to be used on wheat in USA and NZ and Australia. My weight was 69kg mid-2023, I went down to 60kg in March 2024 and now hover around 63kg (just after winter here in NZ) - wheat-free and very low alcohol consumption.

      Hi Jess Thanks so much for your response and apologies for the long delay in answering. I think I must have been waiting for something to happen before I replied and unfortunately it fell off the radar... I have had an upper endoscopy and colonoscopy in the meantime (which revealed 'minor' issues only). Yes I do think histamine intolerance is one of the problems. I have been lowering my histamine intake and feeling a lot better. And I do think it is the liver which is giving the pain. I am currently taking zinc (I have had three low zinc tests now), magnesium, B complex, vitamin E and a calcium/Vitamin C mix. I consciously think about getting vitamin D outside. (Maybe I should have my vitamin D re-tested now...) I am still 100% gluten-free. My current thoughts on the cause of the problems is some, if not all, of the following: Genetically low zinc uptake, lack of vitamin D, wine drinking (alcohol/sulphites), covid, immune depletion, gastroparesis, dysbiosis, leaky gut, inability to process certain foods I am so much better than late 2023 so feel very positive 🙂

      Hi and thank you very much for your detailed response! I am so glad that the protocol worked so well for you and helped you to get your health back on track. I've heard of it helping other people too. One question I have is how did you maintain your weight on this diet? I really rely on nuts and rice to keep me at a steady weight because I tend to lose weight quickly and am having a hard time envisioning how to make it work, especially when not being able to eat things like nuts and avocados. In case you have any input, woud be great to hear it! Friendly greetings.
