Grain Free Casein Free Biscuits

I've been experimenting with coconut and almond flours, attempting to replace all of the other gluten-free flours that I've become accustomed to using because my husband and I are trying to go totally grain free.

Here is a very nice drop biscuit recipe I want to share that uses both almond and coconut flours, as well as a bit of flax meal; my husband says they taste very much like Bisquick biscuits, only better.

I like the flavor and the texture of the almond-coconut flour combo.....I continue to experiment! :)

Ingredients:

4 eggs

1/4 C coconut oil, melted

1/4 tsp salt

1/3 C coconut flour

1/4 C almond flour**

1 1/2 T flax meal

1/2 tsp baking powder

1-2 T agave syrup or honey (optional)

Directions:

Preheat oven to 350 degrees.

In a large bowl, whisk together the eggs and coconut oil (and agave if using) thoroughly. Combine the salt, coconut and almond flours, flax meal and baking powder in a separate bowl, then stir into the egg-oil mixture, blending well.

Drop by spoonfuls onto a baking sheet lined with parchment paper. Bake for approximately 16-20 minutes (start checking them at about 16 minutes), until beginning to develop golden-brown spots on tops. Makes 8 biscuits.

**Note: I am following Elana Amsterdam's suggestion and using ONLY finely ground blanched almond flour. Some almond flours on the market simply are not fine enough to give a good texture to baked goods. For example, Bob's Red Mill Almond Flour just doesn't work. The flour that I'm currently using is Honeyville's Blanched Almond Flour.

I'll have to try these. I have been experimenting with coconut flour also. I just want lower carb options. I have some almond meal I made myself so I don't know if it will be fine enough but worth the try anyway! Oh, by the way, I have some of this coconut flour and have used a couple of these recipes and want to try more. I have made the gluten free coconut pizza crust and the crust for the gluten free cheesecake. The pizza crust is awesome and so was the crust. I used the crust for a cherry delight desert I made for Thanksgiving. I liked it better than the old graham cracker crust I used to make.

Hi Roda,

Yes, I've tried the Tropical Traditions pizza crust too, and my husband and I really like it! It's hard to believe that it's grain free!

A friend of mine ordered some of the super fine blanched almond flour for me the other day, so we could split the shipping costs. I have coconut flour here. I am not particularly avoiding grain, but I really want to focus on making sure the foods I eat aren't wasted calories -- that they're packed with nutrition. Fiber is something I have to work to get enough into my diet anymore. The coconut and almond flours are good for that.

I think this will be the first recipe I try with the new almond flour. Have you tried making dumplings with it yet maybe? I sure miss Chicken & Dumplings...

Hi Elizabeth,

I was just thinking that the biscuits might be good for Chicken and Dumplings! I haven't tried that yet but want to soon. If you do please let us know how they are as dumplings!

I made these today and they are really good. I had my own almond meal that I had made in the blender and the texture was good enough for me. I shared some at work and got rave reviews. I liked them warm with strawberry polanar all fruit spread.

So I was determined to make these tonight, but then realized I don't have coconut oil! I used Crisco instead. Unhealthy, I know, but I hope it works.

They're in the oven now. I'll try dumplings a different night... after I figure out whether they work with Crisco. ;-)

I will definitely add coconut oil to my grocery list, though.

OK....I finally got around to making Chicken and Dumplings!

I made a batch of this same grain-free biscuit dough and dropped spoonfuls on top of the chicken stew then turned the Crockpot to "High". They were done in about 45 minutes (firm to touch on top and when I inserted a table knife nothing stuck to it).

Yum!! I was really craving Chicken and Dumplings....it's nice to know that I can have a grain free version!

      The previous post did not come through right. I wonder if tingling burning feet are part of it.. I'm not sure if it's the med reaction that people with gluten intolerance get or the food we ate  It's frustrating because a person who did not want to admit to himself I had this condition wanted me to eat this chicken sandwich and now I'm stuck with a variety of symptoms plus now I'm hungry on top of it..  I'm new to this so I forget that "one bite" of the wrong thing can hurt us.😔. Do we stop eating if someone exposed us to gluten ??  My stomach is rumbling but my joints hurt ...  It's weird because I can feel the anxiety coming on.  I get joint problems ,  I don't know if anyone ever got hot flashes?? I suppose if it affects people head to toes you can get that too.   It's weird...hard to decipher what is what.   Also how long do I have to deal with this attack??  Makes me feel like not getting up out of bed.  I get too many symptoms which  horrible.  Thank you for your response..

      as my last post stated, i was diagnosed via endoscopy on the 14th of june. i have been eating amazing home cooked meals, luckily, mainly cooked by my boyfriend who is extremely careful about contamination (and is an incredible cook at that). however, i find myself in a mental rut still. being 18, this is the time in my life where i should be exploring things, going out, having fun. yet every corner i turn i'm tortured by the amazing smell of something i can't have anymore. the wonderful sight of such yummy foods. it's near torture. if my boyfriend and his friend who lives with us buy something i can't have, they'll usually eat it outside of the house or the car or wherever we are - which is greatly appreciated - but even seeing a burger or chips or a sausage roll in their hands guts me almost beyond repair. i just wanna have it again too. i miss it. i feel left out and it makes me very sad all the time. it's not their fault. they are allowed to eat whatever they want to, whatever their intestines will allow. it just stings, bad. and i feel so ungrateful given i basically have a private chef who is doubly the love of my life. but it's just so hard. i know i'll adapt. i haven't given up hope.i just wanted to vent. thank you for reading

      Thank you. I must have misinterpreted a study or something. Thank you for the clarification. Much appreciated. Almost three years into my celiac diagnosis and I'm still learning new things.

      I wasn’t clear, glucagon and gadolinium were intravenous. I drank about 5 cups of the prep during 45 minutes. I feel very tired now, probably partly because I was nervous, and partly because I had to fast for 6 hours beforehand and wasn’t very hungry when I got home.
